Do you have any healthy vegetable recipes?

I am looking for some delicious (healthy) vegetable recipes and was wondering if anyone has any they would like to share. I am trying to expand my horizons when it comes to veggies.
 
Drain and rinse a can of black beans. Cut up a mango (diced, chopped, chunks however you like it). Chop up some onion and garlic (again this is however much you like). Dice a few jalapeno peppers (to taste). Wash and chop up a nice amount (maybe a cup or so) of cilantro. Throw it all together and toss lightly. Add lemon or lime juice to taste. I also like to add tomato to mine. I always double the recipie. Lots of to taste in this recipie ;) .

I love to slice up zucchini(leave skin on) into sticks, dip in egg whites and then Italian breadcrumbs, put on cookie sheet and bake.. I think it's 20 minutes at 350. I also liberally shake chili powder all over them right before I pop them in the oven.
 

Microwaved spaghetti squash - Split squash with a knife (be careful) then clean out seeds. Place in microwaveable bowl filled halfway with water then face squash facedown. Nuke in 10 minute increments until done then cool. Sometimes I shred it with a fork, pat it with "healthy" butter, and add salt and pepper to taste.

Or you can bake it. I also eat it with spaghetti sauce.

Baked/broiled asparagus - Mix asparagus with olive oil then add salt and pepper to taste. Bake/broil until done. Yum!

I bake zucchini as mentioned, too, except no chili powder .. I think I will try that - thanks!

I slice an eggplant, dip in egg, and coat with breadcrumbs and a little wheat germ.

slice zucchini and squash in 1/2 in thick slices (diagonal) then coat with olive oil, salt and pepper or any other seasonings you like. Grill for a few minutes on each side. I do the same with fresh asparagus. My kids love it.

My mom uses Asparagas, dips in eggs, then breadcrumbs....but she fries her...not very healthy huh :confused3 ....but you can try to bake them :thumbsup2
 
What about cucumber salad? Peel and slice cucumber into thin slices. Slice several roma tomato into thin slices. Layer the cucumber and tomato with thin slices of onions, add enough italian dressing to cover. Let marinade in the fridge overnight.

I'll have to try that-I love asparagus!
 
I love veggies on the grill. Try eggplant, zuchinni, squash, asparagus, peppers, really just about anything with weight. Brush with olive oil and coarse salt and pepper and grill. Yummy.
 
Grilled Asparagus are great. Coat them with olive oil and pepper - grill till crispy - then salt a bit and eat. You can also broil them - they're great. You can add fresh garlic if you like.

I will also do "roasted" vegetables - chunks of red peppers, onions, mushrooms, zucchini, string beans etc - coat in a little oil - usually I'll sprinkle with one of the Mrs. Dash seasonings and roast at 450 till done.

We also love sauteed zucchini - slice into "coins" - skin on, slice an onion as well and sautee in a little olive oil and pepper - again salt when done.

I salt my veggies after they're cooked so they retain their shape better. I have found when I salt before cooking that they get mushy faster and I have a harder time getting them crispy. Also if you don't want the calories of oil use some Pam instead :)
 
I make something similar to crazyme5kids that everyone loves:

1 can black beans
1 can pinto beans
1 can black eyed peas
1-2 red, orange or yellow peppers
4 stalks of celery
1 bunch green onions
1 sm can pimento
jalapeno peppers to taste
1 can white (shoepeg corn)

dressing is 1/2 cup vegetable oil, 1/2 cup cider vinegar and 1/2 cup sugar (mix together well)

Chop and mix above, pour dressing over and refrigerate.

I serve this with the Tostitos Scoops chips. It is also good on pita bread.
 
Thinly slice up a couple of large cucumbers and place into a zip-top baggie. Add in 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Squeeze out as much air as you can and seal the baggie. Throw it in the fridge for 20 minutes. Take it out and drain off the liquid. Voila- pickled cucumbers that are really yummy! (If you want to splurge a little, add in 3/4 cup of fat-free sour cream and a few sprinkles of parsley to make a German dish called Gurkensalat)
 
Tazicet, my mom makes one similar but uses dill.

For a main dish how about zuchinni parmesian?

I make portobello mushrooms stuffed with spinach and cheese. Just saute the spinach with olive oil and garlic. then mix swiss or parmesian, or whatever cheese you have on hand that you like into the spinach and plop it onto the mushroom. Throw it into the oven to bake for a while. Sometimes I'll add shrimp or crabmeat. Sometimes I add tomato or I'll put thin slices of tomato on top.

As you can tell I do a lot of just throwing things together.
 
A terrific way to expand your veggie horizons is too put them in salads.

You can have traditional salads and add veggies or my old neighbor has introduced me to "sweet salads" in which she includes fruit with the veggies and a sweet vinagrette dressing.
 
I agree. I am a huge salad fan! Just had one for breakfast. I am not big on dressings though and mainly stick to olive oil and vinigar, which works very well with fruit that is added to a salad.
