Do you bake pumpkin pies? I need your help!

I am making several pumpkin pies for family and friends this Thanksgiving. And this is my question...

Can I mix all of my ingredients together and then let them sit in the fridge until I am ready to bake the pies? I can't bake them all at the same time. So, is it okay to mix one large batch and then bake them individually?

I think it depends on how long you plan to let it sit. I'd cover it tightly and not leave it overnight... I think it might get thick and groadie.... but I've never actually tried it. This is just my guess. Have you Googled it?
 
I have never done this, but I would think it would be alright as long as you brought the mixture back to room temperature, and did a quick whisking of ingredients before pouring into crusts.
Pumpkin pie keeps well for one week after baking, so you could always make them and keep cool/cold and they will be great through the holiday weekend.
