PoohBear, I have a great fruit cake recipe from Taste of Home magazine...my mom used to make it...I was just getting hungry for it...
Festive Fruitcake
1 cup Butter (no substitutes)
1 cup Sugar
3 Eggs, separated
2 Tablespoons Lemon Extract
1 1/2 cup Flour
1 1/4 cup Golden Raisins
1 1/4 cup Red and Green Candied Cherries, halved
1 1/2 cup chopped Candied Pineapple
2 cups Whole Pecans
Cream butter, sugar and egg yolks. Add lemon extract, mix well. Gradually add flour. Fold in fruit and nuts. Beat egg whites till soft peaks form, fold into batter and mix well. Spoon into a greased 10" tube pan lined with waxed paper. Bake @ 200 for 1 1/2 hours, increase to 250 and bake 1 hour, increase to 300 and bake 30 min. Remove from oven, cool completely in pan.
it's very good, a light colored cake, the only one I've ever liked!
