Do I need FOTL access for first week in December?

How are the crowds? We are planning on being there for Saturday 12/3, Sunday 12/4 and possibly Monday 12/5 if DS & DH really love it.

The weekends can generate some local volume but as a rule the crowds are light.

During the off peak times, crowds are very light in the morning, but then people show up in the afternoon. You can easily take a lap early in the morning and you'll have walk on rides. In the afternoon, I'd say the major attractions will have a 30 minute wait.
It really comes down to whether you want to "feel" like you're a part of the action. Stay onsite, and you can walk back and forth in minutes. And since the pools are heated, you could probably use them. The short walk to the parks and the pools are what set the onsite hotels apart from offsite.
If you stay off site, you go early in the morning, and leave by the afternoon, but you save a ton of money. You'll have fun either way.

you can probably walk on as many rides as you want until around 11AMish. After that, the crowds pick up and the waits start. And, they lately have not had their version of "Fast Passes" running so the earlier the better!

We'll be there the following week and planning a day at Universal hoping to do as much in both parks as possible. We're looking at sunday the 11th, will that be doable? Or should we go for a weekday? We've been there before and don't have to do "everything" but it's been several years. . .

Sundays are usually pretty quiet at that time of the year.
