DO I need ADRs to have dinner at

That would depend on when you will be visiting, when you want to eat, and how many are in your party. Overall, you will be better off having a Priority Seating reservation. Better safe than sorry, because there are times (like holidays, super crowded times, etc.) when BB does not accept walk-ups.

I haven't eaten their (yet-I have an ADR in October) but from what I hear, YES. I remeber a few year ago people used to walk up all the time and I'd hear them get their name put on a walk up list. These days you need an ADR, but I don't think you need to worry about snapping it up the minute the reservation window opens. DLR is still much easier than WDW in that respect.

About 5 years ago I did a walk up at Ariels for the WOC dining and I just had to wait about 25 minutes. We got to sit right in front of a window during the first show and then we used our fast passes to see it a second time. It was a simple, convenient, unplanned night and yet it was one of the most magic we ever had-a great ending to the best trip we ever had too. I could never do that now. In March I got my ADR a week in advance and I had to look through several days to find a WOC dinner ADR period. I ended up with a very early dinner too. From now on I'm booking ahead.

For Blue Bayou? Yes. I've seen them turning people away every time we are in the park.
 
I recommend getting reservations for any sit-down restaurant, and especially Blue Bayou. We were there a couple of weekends ago and tried a couple of times to get in, but they were full. We ended up eating at Tortilla Jo's, which was fine by me (tableside guacamole... yum).

if you book Ariels for WOC package, you get to sit by the window and eat while the show is going on,and watch?
 
Im not sure if they still do this since that was a few years ago-the set menu was better then too compared to what we had available this time (does anyone remember the old menu that had appetizers on a 3 tiered thingy and the desserts were themed to go with the show including a piece of white chocolate made to look like a film strip with scenes from WOC printed on it with food coloring?)

There were 2 WOC shows that night. we were eating during the first one. As a party of 2 we always get to sit by the window there since they only have tiny tables by the window. when we were done eating we got our FP for the second show and we headed over to the prefered area. It was like getting to see the show twice (though you couldnt hear it the first time). it was perfect. A show with dinner and then a show after dinner. as a person who is only 5'1 I cant ever even see WOC unless im the first one there and until that night I had never been able to see it well at all so what a perfect treat to see it twice.
 
Yes...but I have made reservations even the day of but usually turned away when we are looking for walk up options. Just yesterday we wanted to stop in later for just dessert and there were no walkups available at either Blue Bayou and Cathay.
 
My advice. If you know you want to eat someplace that takes reservations, make a reservation.
