Do FP+ have to be consecutive days

If we are staying at Disney and have 8 day tickets, but are staying 10 days, can we have off days and still schedule FP+ for our entire trip?

If we have friends linked to our MDE staying off property with 6 day tickets, can they also make FP+ on nonconsecutive days? ie days 1, 2, 3, 4, 6, ,7, 10?

Yes to both of your questions. If your friends are grouped with you for FPs, they'll share your 60-day booking window.
