He was also at the pool one day in one of the cabanas, the cabana was closed off so you couldn't see inside but when there weren't many people around he did jump into the pool for a dip to cool off.

Not so much because they are "special" per se but rather because other guests could create a security/safety risk by crowding around them wanting autographs, etc.
Furthermore, they are also on vacation themselves and deserve some privacy and respect. Sadly, there are many who forget that celebrities and their families are entitled to these things; despite having careers that often put them in the public eye.
Providing special access allows Disney to control security risks for all guests and give their celebrity guests a modicum of privacy during their vacation.
