The Alaska and North Europe do not have Fireworks, they have a Frozen Deck Party

The 3/4 night cruises will have them unless there is some technical/weather issues yes! The 3 night has the pirate night with fireworks but not the pirate menu (which is nothing to be sad about. That menu is terrible)

Never been on a Disney Cruise but thinking of doing the 3 night Halloween one out of Port Canaveral. Will it have a pirate night/fireworks?

Just remember fireworks are subject to cancellation due to weather conditions; always a possibility. But ordinarily, yes, the 3-night Bahamas cruises will have fireworks
