DL Planning- Where Do I start?

Okay DD will be 4 in April. She has been to WDW 5 X. I can't even count how many times I've been. I'am a pro at it. I know it like the back of my hand. All the in's and out's.
I have Been to DL 3X in my younger days . The last time was probably 25 yrs ago.

Any way I would like to plan a trip this year around Easter. ( DH is teacher I have no other choice but to stay home)

How do I start planning ? How will I know if It will be up to DD expectations?
Where to stay? I usually stay in the parks at WDW. How mant Days will I need to do DL ?
Where MUST I dine??
