Disney World in 3 days?

Based on what you've described, I would do 3 day park hopper and do 1 full day/night at MK and the other 2 days I would do EP/HS and AK/EP. Get your FP at HS & AK since EP attractions are of the least interest to you. I would RD EP so you can get to either Soarin' or Test Track with not too bad of a wait and have HS in the 2nd part of the day so you can enjoy the Star Wars nightime fireworks show.
 
It'd definitely possible to do Disney in 3 days. You won't be able to do it all, but you wouldn't be able to do it all in 10 days, so just focus on what you can do.

If I were you, I would start with/priotitize Animal Kingdom and Studios because those two parks have the attractions that are most unique to Florida. You've visited Disneyland several times before, so many of the rides in Magic Kingdom will be a rehash for you and the kids; and Soarin' and Fast track are the biggest draws for boys in Epcot and you've already got Soarin' in Cali, and Test Track (IMHO) isn't as good as radiator springs.

So I would do Animal Kingdom day one. If you find you've done all you want to do in that park and you still have time in the day, THEN get a hopper.You can always upgrade while you're there IF you need it.

Day two I would do Studios. Assuming you didn't upgrade to hoppers on day one, if you find you have time left over after doing all you want to do in Studios, then upgrade and head over to EPCOT. Mission Space doesn't get a lot of love but I think 8 and 10 year old boys would love it. The Frozen ride is something they'd probably like too. If you keep refreshing FP you've got at least a decent chance of snagging one.

Day three I'd do MK. Hit the uniquely Florida rides and/or hop to other parks to tie up any loose ends.

I'd use the website to start looking over the attractions in each park with the kids as soon as possible, so you get an idea of what they like and want to do. This will give you a better idea of exactly what your time in each park might look like.
 
Thanks for all the great advice everyone! I ended up buying tickets for four days, one park each day. LOL, you guys talked me into it. We are going to Epcot, then HS, then we will take a break from Disney and go to Kennedy Space Center, then go to AK, ending with MK. We have one unplanned day at the end of our trip that hopefully we will have enough energy to go see the Everglades. I haven't been able to figure out if Magic bands are necessary if you are staying off property. We have My Disney Experience on our phones, the kids don't have phones though. It seems like the tickets operate the same way as the bands. We can have the ticket on a retractable badge holder or on a lanyard. What do the experts think about that? Do I need magic bands? And what about Memory Maker? $169 is a lot of money! If cast members will take pictures with your phone, is it necessary?

If you are staying on property they will send you magic bands for free. The bands are used to enter the parks, for fast pass, for buying photos that cast members take of you, and can be used to pay for food and snacks (if you want).

The magic bands are also used to enhance some rides.
