I am making the same decisions right now! We are going in June and taking a 6, 4, and 7 mo. old. I have decided to take the double. The older boys can switch off when they are tired. Plus, our 4-year-old is sloooooow and a wanderer. He wandered off for fifteen minutes right before the fireworks last year. It was awful.
So, I figure if the older one is really tired at night when the younger two have to be in there, I will just rent or put the baby in my sling. I will be bringing two slings to the hotel, and probably using both alternately. It saves my back not to use the same one all of the time. Maybe I'll be bringing one during the day, and switch to the other at night. If you don't have one, maybe borrow from a friend for the week.
As for hotel...with the deal we are able to spend time at a moderate this year because of the g.c. I picked POFQ even though some of the other mods seem "cooler" because of the busing and the size of the resort. Less walking and whining for the kids! We are going to ASMo for the last two days because the kids REALLY want to stay there. A little nervous about that, I won't lie. But, we will just have to take a deep breath and not worry too much about timing.
As far as the values are concerned, I would pick the theming that you like best. We stayed at POP last year...everyone said how great the buses were. And it was fine, but they were full a lot. We stood quite a bit, and I am dreading doing that with two little guys, a stroller, a baby and a backpack. But it's worth it to save the money on a rental car.
Don't know about dining as we gear more towards CS. And we do one character meal at Chef Mickey's. I wouldn't worry about it though...that kind of stuff tends to work out.
