My opinion on EMH is based solely on PM EMHs (because we're sleep-in kind of people

), but here it is: In my experience, the first hour can sometimes remain a bit crowded, but afterwards the park generally clears out. At AK, we've hopped on EE with a 5 min wait and rode Kali River Rapids 4 times around WITHOUT GETTING OFF THE BOAT. And this was during a busy spring break week! MK EMHs have also been really good in our experience, as well as DHS. That same week I was talking about, we were able to ride ToT with a 5 min wait and walk right on to RnRC.

Admittedly, you often have to stay all the way through closing to receive some of these benefits, but what we do is hang out in the shops or grab a snack or ride some of the less popular rides early in the EMH while the crowds subside and then hit the more popular stuff later. It works great for us!
I will say, however, that we have never tried PM EMH for Epcot with rides in mind. We've done the EMH once, but we used the time to walk around the countries at WS because the rides were too busy. Still, we had a lovely evening!
As for some input on dining, I think if you want to hit just CS places to save some money that it's entirely doable without having to eat just cheeseburgers or chicken nuggets all week. Earl of Sandwich is AWESOME and reasonably priced (I think all the sandwiches are in the $7-$10 range if I remember right, and I think that's a high estimate.), and Sunshine Seasons in the Land at Epcot has an amazing variety of food that is also reasonably priced. When we were kids and only ate at CS places, my mom estimated about $20 per person per day for all of our food and snacks, and she usually came out with money still in her pockets after the week was over.
