We are having a Disney Planning Party for the people we are going to Disney World with.

So here is the question: What Disney inspired food should we serve? :confused3
 
Dinner, brunch or just snacks? Do you have a resort chosen yet? Do you have any definite restaurants you want to eat at? Or any you want to convince others to try? (A little culinary persuasion might work! ;))

Here are some snack/dessert type suggestions:

Dole Whips (the recipe I have is a clone)
Crisp Rice Sushi (made with candy not fish)
Safari Crunch (sort of like granola or a cookie)
Bread Pudding (various recipes from different resorts)
Strawberry Banana Bread (WL)
Frunch (Boma, AKL)
Grapefruit Cake (Brown Derby)
Cheddar Cheese Pretzel Bread (Le Cellier)
Paw Print Brownies (Boma, AKL)

Sorry - I forgot to mention that the pretzel bread was a clone recipe.

CHEDDAR CHEESE PRETZEL BREAD
Great Pretender for Le Cellier, Canada Pavilion, EPCOT

Makes 1 loaf (20 servings)

This giant twist is for those who are fans of soft pretzels. Rather than shaping the dough into individual portions, it is rolled in a thick rope and formed into one oversized knot. Slice and serve with sausages and a good cold beer.

½ c chopped onion
1 Tbl butter or margarine
4-5 c all-purpose flour
1 pkg active dry yeast
1 egg
2 c shredded sharp cheddar cheese (8 ounces)
1¼ c warm water (120°-130°)
1 Tbl sugar
1½ tsp dried Italian seasoning, crushed
½ tsp salt
1 slightly beaten egg white
1 Tbl water
1 tsp coarse salt (optional)

In a small skillet cook onion in hot butter or margarine till tender but not brown, about 7 minutes. Set aside to cool slightly.

In a large mixing bowl stir together 1½ cups of the flour and the yeast. Add cooked onion, egg, cheese, 1¼ cups warm water, sugar, Italian seasoning, and salt. Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.

Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6-8 minutes total). Shape into a ball. Place in a lightly greased bowl; turn once. Cover and let rise in a warm place till double (1-1¼ hours). Punch dough down. Turn out onto a lightly floured surface and let rest for 10 minutes.

Lightly grease a baking sheet. Roll dough into a 48-inch-long rope. On the baking sheet form the rope into a large pretzel shape by crossing one end over the other to form a circle, overlapping about 12 inches from each end. Take one end in each hand and twist once at the point where the dough overlaps. Lift each end across to the edge of the circle opposite. Moisten the ends and tuck underneath; press to seal. Cover and let rise in a warm place till nearly double (about 45 minutes). Stir together egg white and 1 tablespoon water; brush onto bread. If desired, sprinkle lightly with coarse salt.

Bake in a preheated 375 degrees F oven for 40-45 minutes, or till bread is golden brown and sounds hollow when tapped. If necessary, cover loosely with foil the last 20 minutes of baking to prevent overbrowning. Remove from pan; cool completely on a wire rack.

disney-cruiser: LOL I have a huge collection of Disney recipes on my computer so they typing was done about 2 yrs ago. ;) Also, I found it somewhere on the Internet (maybe Margie J's site www.disneyrecipes.com - IMHO the best recipe site out there) so I can't take credit for that either.

MickMan - Since you're having dinner, I'll tell you our favorites. I have the recipes if you want any of them.

Marinated Flank Steak (Boma, AKL)
Marinated Chicken or Pork ('Ohana, Polynesian)
Cured Pork Loin with Coconut Curry Sauce (Boma, AKL)
Citrus Chicken (Hollywood & Vine, MGM)
FuFu (mashed sweet & white potatoes with some spice: Boma)
Cinderella's Au Gratin Potatoes (really for breakfast but good anytime: Cinderella's Castle, MK)
Root Beer Sweet Potatoes (sounds odd, but they're good!: Hollywood & Vine, MGM)
Creamed Corn Spoon Bread (Hollywood & Vine, MGM)
Durban Spiced Roast Chicken Salad (salad greens with a Chili Cilantro dressing: Boma)


Dessert:
Twinkie Tiramisu (Pop Century)
Tie-Dyed Cheesecake (Margie J's site has a great pretender recipe for this: Pop Century)

Made the tye-dyed cheesecake over the weekend. It was awesome!! Not only did it look cool and taste great, but DH and I had a lot of fun swirling the batter in the pan together! We aren't completely sold on the red velvet crust but it added to the "cool" factor. We heard lots of "did you really make that?" "can you eat it?" and "wow"

I think Piratesmate said the recipes are available, but I couldn't find them on the website (which is really cool, BTW. I will be going back there!) I am looking for a pork roast recipe -- particularly from the Polynesian luau, but the Boma recipe sounds promising too.

Piratesmate can you send them to me?

I don't know if this is the luau recipe or not as we've never been. :( But I've used this on both chicken and pork - we really enjoyed it. However, the Boma recipe for pork roast is outstanding! And with the sauce? Well, it's to die for - even though I never say that! :teeth:

White Meat Marinade
from 'Ohana, Polynesian

2 Tbl garlic, minced
¼ c malt vinegar
¼ c lemon juice
3 dashes Tabasco
1 tsp kosher salt
½ tsp cracked black pepper
¼ c light brown sugar
1 c olive oil

Place all of the ingredients except the oil in a food processor. Slowly add the oil to the food processor to form an emulsion. Reserve half of the marinade for later use. Marinate the meat for two to three days in the refrigerator. Strain the reserved marinade and use to baste the meat during the cooking process.

CURED PORK LOIN
Disney’s Animal Kingdom Lodge: Boma

3 lb pork
½ c Kosher salt
1 c sugar
1¾ c brown sugar
1/3 c minced herb (thyme or rosemary), chopped fine*
1/3 c ginger
2/3 c cinnamon
{*Note: Make a different variation by adding different spices.}

COCONUT CURRY SAUCE (FOR FISH OR PORK)

1 c Coconut Milk
½ oz Curry Paste (see recipe below)
1 qt Soy Sauce**
2 c Sugar**
½ oz Lime Juice
½ oz Cilantro, chopped rough

Mix all the ingredients together except for the cilantro. Mix well and heat until reaches the proper temperature. Pour over the seafood. Garnish with the cilantro.
{**Note: Frankly, this looked like way too much soy sauce & sugar to me! I was appalled. :earseek: So I reduced the soy sauce to 1/2 cup - low sodium! and the same for sugar - except I use Splenda.}

CURRY PASTE***
¼ c Olive Oil
¼ lb Red Pepper
¼ c Fresh Ginger Root
¼ c Garlic Cloves
1 Tbl Ground Turmeric
1 Tbl Ground Cinnamon
1 Tbl Ground Cumin
1 Tbl Ground Cardamom
1 Tbl Ground Coriander
1 Tbl Cayenne Pepper

Puree peppers, fresh garlic, and ginger in a Robot Coupe. Heat olive oil in non-reactive pan. Add in puree and simmer for one hour. Then remove pot from heat and add all other ingredients. Puree again until smooth. Allow to cool to room temperature. Puree with a blender and run through Food Mill.

Cool, cover and refrigerate in jars for up to one week.

***I don't usually make this and keep it around as this is the only recipe I use it in. Instead, I just cut everything in half and used it all in the sauce for the pork...even if it is more than it calls for - I've never measured/weighed it.
