My DF is VERY picky when it comes to hotels (he doesn't like the victorian, boardwalk, contemp type themes). I want something romantic yet in the middle of everything so that we don't have to hike it all the time. Is it worth it to switch hotels during our stay (7-10 days) I think I would much rather stay in one place, yet he thinks we should move around to save money (I am more worried about sanity). Any pointer would be helpful!

How much you move around will greatly depend on what you want to accomplish and how frequently you visit Disney. If you get to the resort regularly, you may want to stay in one place for your honeymoon. If you don't, you many want to move around a few times so that you can experience the different experience each hotel has to offer.
The last time we went to Vegas, we moved around 3 times because it was his first trip out. There was so much he wanted to see and do- he put hotels on the priority list. So, we moved every 2nd day. For him, it was worth it. For me, I would have much rather stayed in one place and unpacked! Find the compromise that works for the two of you! Maybe moving once would work great- you get a hotel choice, he gets a hotel choice. Just remember to pack light or pack a large extra bag to make moving easier. Disney does allow you to check your bag in for the day so that you don't have to worry about the differences in check-in/check-out times. If you have a car, this wouldn't be much of an issue.
He may enjoy the Polynesian. It's very convenient becuase it's on the monorail line- the only one he didn't nix sight unseen! Wilderness Lodge is a personal favorite. Animal Kingdom Lodge might be a special treat although it's a bit further away from everything. In the moderate range, the Port Orleans French Quarter would be my suggestion. They just renovated it. The rooms are beautiful and the mattresses are super comfy!

In the value resorts, Pop Century is a lot of fun. We love the All-Star movies section for Toy Story.
Flip through the website together and put together a list! These days, there are great interactive tools, etc., thatyou can look through before booking!
