Disney Gift Cards

I have some Disney gifts cards that I'm planning to use on our upcoming trip. I know you can use the cards to pay the tip and for drinks at Disney restaurants, but does anyone know if you can use the gift cards in DTD? Can you use them at Ghiardelli's or for shopping or can they only be used in the parks and resorts?
