Disney Gift Cards at Counter Service?

Can they be used at counter service/snack places? Sending DD one for her birthday at MK to pay for snacks.

Yes.

With the caveat that it needs to be a place that is set up to take all forms of payment (credit cards, magic bands, etc). MOST places can, but there are a few vendors that will only accept cash (like balloon vendors and the occasional pop up stand). Also, I don't think every place at DTD does, but MOST do.
