Disney for one day

My DD and I go to Disney World regularly but my husband does not come with us. He will be going to Disney with us one day pre cruise. Looking for advice on what to do. Do we just spend the day in Magic Kingdom or should be park hop. Trying to make the most of one day without making it too stressful. DD is 2 and loves Pooh so breakfast or lunch at Crystal Palace is a must do. We are going at the end of February if that makes a difference.
 
Does husband drink adult beverages? It's pretty easy to get to EPCOT from MK and he may like walking around WS and grabbing a cold beer after a day at MK. We enjoy walking around and looking at the different themes of the various countries.

When my kids were little we loved to spend a day at MK and looking at the park through their eyes, and EPCOT gave us some "adult time".

We did three parks in May but with shorter days in Feb I think 2 parks are pretty much Max IMO.
 
Does your husband have any preference?

If I were only going for one day, I'd stick to MK and skip park hopping. I'm a big fan of hopping, but I'm an even bigger fan of MK. It's quintessential Disney to me, from the rope drop ceremony to Wishes and everything in between. I could skip the other parks and be perfectly content with a one day experience at MK.

But that's just me :)
