Flying Fish Tasting Menu
I have no notes and a horrible (food) memory so this thread seemed like a better fit than an actual review. This is from Oct 2010, and I think they were still testing things out. They might have now changed it to a 5-course meal, but the website still says 6. Also I apologize for the state of some of the dishes - I had a hard time remembering to take pics first...
Extra amuse-bouche (not on menu): Tuna tataki of some kind...
Amuse-bouche: Balyk-cut smoked salmon and miso-glazed eel; poached quail egg and Asian accentuations
1st Course: Pan-roasted Main diver scallop salade; Hudson Valley duck proscuitto, spiced palm hearts, spicy radish
2nd Course: Maine lobster-laced Ligurian trofie pasta; roasted fennel, tiny tomatoes & lobster roe crema
Intermezzo: Sorbet of some flavor
1st Main: Slow-braised Colorado lamb shank and merguez sausage; wasabi mustard greens, roasted beets, truffled lamb jus
2nd Main: Tournedos of North Carolina Hills-raised veal tenderloin; heirloom potato, porcini, leek, smoked bacon "hash", rich red wine and cassis reduction
Dessert: Caramelized poached pear napoleon; Columbian creme caramel, limoncello sorbetto, and chocolate accentuations
