Disney down time activities/crafts

I'm planning our family's first trip to Disney with a 5yo and 3yo. We'll be there for 7 days and plan on having some down time each day. In a perfect world they'd nap but I'd like to have some input and ideas of activities that I can surprise them with that are quiet and continue the Disney theme. Other than the printables, the other things I'm thinking of are:

Disney Princess and star wars Lego Sets
Disney Perler bead patterns to make bag tags
Disney puzzles

What tips/ideas have others done to keep the LOs from getting too overexcited day in and day out? TIA
