Hello, now that my kids are grown I would love to go on a disney cruise just adults. What are the cruises like in recent years. Is there an adult only space? Or will I feel like I'm not escaping children and getting the grown up break I am looking for?

Yes, all the ships have adult only areas. As well as Castaway Cay has one.

You'll still feel the presence of children onboard, as they are there.
 
On the 4 existing ships (Magic, Wonder, Dream, Fantasy) the adults-only spaces are a set of lounges that are used for activities during the day and become 18-and-up at night, and a pool area and coffee shop on the pool deck that are 18-and-up all day. There are also adults-only restaurants (2 on the Dream/Fantasy, 1 on the Magic/Wonder) that can be booked for an additional fee.

Of course, there will be children on the ship, but if you stick to activities designed for adults (such as non-Disney trivia, alcohol tastings, cooking demonstrations, and lectures) and avoid character meets, family games, and deck parties, you won't see many kids except at mealtime, at shows, and when walking around the ship. Some ports have ship excursions designated as adults-only.
 

We have done many Disney cruises as adults only and it has been great! On the Fantasy, we fell in love with Satellite Falls!

I just cruised the Fantasy last week, and also cruised the Magic in October, both solo cruises. Prior to that I used to cruise with my son, who is currently too sick to travel. Here's my two cents:

1. These are overwhelmingly family cruises, so you'll be in the distinct minority. If you're okay with that, then it's fine. The CMs & everyone else will be fine with that. You'll be fully welcome, but you will very much be in the minority, unless you cruise an unusually long itinerary (like the Transatlantic) during the school year. DCL's bread & butter Bahamian & Caribbean runs are family-dominated cruises. If you don't like seeing and hearing kids around, don't cruise with DCL. Kids will be around, seen and heard, in most of the ship.

2. Conversely, DCL does a very nice job of keeping the adult areas adult-only. The adult pool deck, upcharge restaurants, the spa, the gym, and the adult beach on Castaway Cay are all genuinely kid-free. So you can definitely get your kid-free space on a Disney cruise, but that's only when you're in those areas. Dinner at the MDR (either seating), the live shows, lunch at Cabanas, etc., will all have lots of kids around.

3. DCL staterooms are attractive and comfortable, so they're a nice place to hang out and relax, in addition to the public areas. You might occasionally hear kids running or playing around in the hallway or the adjoining stateroom (try to get a non-connecting stateroom if possible), but I have never experienced that as a major problem in 8 cruises.
 
We've only cruised without kids. We always book aft so we walk to the mid-ship elevators to go up to the food and beverage deck. This way the children's play area and most of Tron can be avoided. The only reason to use the aft elevators is if you're heading for the buffet or unlimited beverages.
 
We've gone without our kids 3 times and now they are adults too, so we no longer sail with kids. While of course we see some around, especially when walking through the upper pool deck, we spend most days in the adult pool/bar areas, Palo brunch on a sea day, and then our late nights in the adult clubs. We definitely do not feel over run by kids and enjoy the adult only experiences.
