We are going on our 2nd DCL cruise in January. Does Disney have self disembarkation where you can leave at the beginning of disembarkation as long as you handle all your own bags?

You don't have to leave your bags outside your door the last night for DCL to remove from the ship. However, if you do wish to handle your own bags, DCL does request that you depart the ship as soon as the doors are open (usually by 7:30 am). Not really set up in any way - you just do it.
 
Just remember, if you decide to have breakfast before you leave you'll have to take your luggage with you to the restaurant as they request you not return to your cabin.

They like everyone to be out of their room by 8:00. I have read where others have gone early to the buffet and then returned to get their luggage.

As long as you are out of your room by 8:00, and off the ship by 9:00, that's all DCL cares about. Not sure how early the buffet opens, but only one side is open, and it closes around 8:00, AFAIK. You can remain in the buffet for a little while after the buffet closes.
 
Yah.... why be in rush to skip that meal that you paid for. I always try to be last off the boat. Some even hit the pools as it's less crowded.

We would wait if we could but we have some time constraints. It may not be typical, but the disembarkation breakfast we had on our prior Disney cruise was not worth waiting for.

The pools are not open the last morning:(. They want everyone off the ship by 9am.
