We are going on the dream 5 day DD in June. What is the earliest I can get off the ship? I really need to catch an earlier flight than originally planned. What is the earlier you would book a flight out of
Sanford or Orlando?

We have taken a flight out of MCO as early as 11:00 When we have an early flight to catch, we use a car service that will be at the port at 8:00 AM.

IF (and it is a big if) the Customs clearance is normal, you can get off the ship starting at about 7:30. However...I've been on 3 cruises where the big doors didn't open till after 8:30 and one where it was almost 9:15! When that happens, everyone is in a huge line, getting grumpy, etc and it seems to take forever.

MCO recommends that you arrive 2 hours before your flight. I would not schedule a flight before 11 under any circumstances. DCL recommends noon. Yes, I've been at MCO before 9, but you can't count on that.

If you are using DCL transfers and the onboard check in procedure, they will not transport your luggage under the onboard check in system for a flight before 11:30 (you would have to claim luggage in the terminal).
