DISappearing Peeps...A fastpass to THIN! Part 2

Another couple of chicken recipes:

Salsa chicken.
Take a frozen chicken breast and throw it on the grill... after a few minutes, season w/ salt, pepper, and any kind of Mexican seasoning (taco, fajita, plain chili powder, chipotle seasoning, etc). When it is done cooking, place on aluminum foil w/ one can of mild green chilis, a nice helping of salsa, and cover w/ 2% milk cheese. Serve w/ fat free refried beans or black beans.

Chicken stuffing casserole
Spray one casserole dish w/ Pam. Spread a can of ff cream of chicken or cream of mushroom soup on the bottom, can also add more mushrooms if desired. Make stove top or other stuffing on the side, using only water. (I usually do 2 servings of stuffing to one chicken breast = 1 person). Spread stuffing over soup. Add chicken, sort of mushing it down into the stuffing -- you can use whole breasts or chunk it into piecese. Bake at 350 for 30-45 min or until chicken is done. For the last 5 min of baking, I also melt mozzarella over the top, but that is optional.

Crock Pot Chicken Enchiladas
Throw 2-3 chicken breasts in the crock pot w/ enchilada sauce, a sliced onion, can of green chilis, cilantro, lime, and any seasoning you want (hot sauce, etc). Cook all day until you can shred with a fork. Spread enchilada mix into a shallow wide casserole dish that has been sprayed w/ Pam. Roll the crock pot mixture into corn tortillas, cover w/ sauce, and bake for 10 min at 375. One tip: make sure tortillas are wet w/ enchilada sauce before filling and rolling, helps keep them moists.
*This recipe can be done w/ taco seasoning and used for chicken tacos, if you don't want to deal w/ baking the enchiladas.

And one Vegetarian (and microwave!):
Mushroom Stuffed Eggplant
Cut eggplant in half lengthwise. Place face down in 8-inch microwave dish. Cook on high for 4 minutes or until almost tender. Cool for 5 minutes.

Scoop out pulp and place on cutting board. Chop pulp coarsely. In large bowl, combine pulp, 1 cup diced mushrooms, 1 diced onion, bread crumbs (I use as little as I can to get a good consistency, usually 1-2 pieces of toasted bread), parsley, and garlic. Mix well.

Fill eggplant shells with equal amounts of pulp mixture. Place in microwave dish and cover with plastic wrap. Cook on high for 4 minutes or until vegetables are tender.

Thanks Aaron and Kat for sharing recipes. I will be printing these out and taking home for DH to try. I can't wait to try the enchilada one as I love MX food.

Did I ever tell you guys I work for a food manufacturing company? Do you have any idea how hard it is to diet in a place likes this. So far today, in the first 3 hours of work, we have lentil soup going in the R&D dept., one customer brought in a loaf of some kind of nut bread and another customer just dropped in to bring us each a jar of Blueberry Merlot preserves with Honey. This doesn't even count whatever we are actually making on the production line today. Every employee I have had since I've been here has put on at least 20 lbs after coming here (that includes me).

Fox was wearing in Back to the Future, I'll just stick with my Fruit of the Looms or Haines, thank you very much. I don't need no fancy shmancy undergarments to make me happy. And just because they are old, doesn't meant they aren't clean. So I think I’ve got the "wearing clean underwear if you’re in an accident" thing covered as well. (Ok, this is officially one of the most unusual conversations I've ever had.)

I too achieved nothing. Except producing another offspring and complicating my life further. It's all good though.

Sooooooo, DH went to the Dr. on tuesday for his consultation for the BIG SNIP. Next month he has the proceedure done.

We went to Lowes to purchase our flooring materials. We picked out a nice ceramic tile a few days ago. It was marked down then at 1.39 a tile. I need 612 of those babies.

When we went to buy it yesterday, it was .50 a tile!:cool1: That's 577.00 dollar savings! That stuff never happens to us! Never!:banana:

My son went to an after school function yesterday and they had face painting. They made the kids look like pirates. Mustaches, beards, gotees, etc.

Last night went to wash it off. Nothing. Wasn't budging. I was so angry, I didn't send him to school today. The kids who have been picking on him would of had a field day. That's a whole nother story. I'm ready to call the police on a 13 year old kid, that is soooo sad.:sad2:

The school said no one else called to complain. I'm talking permanent marker. Someone grabbed the wrong pen.:mad: :mad:

I tried everything I could think of. I read about toothpaste, I'm gonna try that next.

My DH goes on the 29th to have his "SNIP SNIP". He was supposed to have already gone, but that is another story.

Great deal with the tile. Nothing like that ever happens to us either.

WOW!! I would have been ticked if that would have happened to my kid. I think you did the right thing by not sending him today. Sorry that happened to him--nothing like a punk kid to mess things up.

One of my all time favorites is mixing frozen lemonade concentrate, honey, lemon juice, thyme, and dry mustard. Soak chicken breasts in that mixture for ~1 hour to marinade, and dump the whole concoction (chicken and all) into a 9x11 pan and cook for the standard 40-50 minutes at 350 degrees. I can get the exact recipe for you if you would like.

Tonight for dinner I am making a crescent roll meal---using chicken, bacon, anc cream of chicken. Mixing together and then placing in crescent roll and then baking. Not sure what I am serving with this.

He's like our brother, you know. :grouphug: Poor dear has to listen to us talk about periods and tampons and bras, and waxing, and maintenance, and wifely wiles, we have to draw the line at *cough* snipping of anything. :rolleyes1

I rarely follow amounts in recipes and usually do the "dab" of this and a "dab" of that thing. It really sounds good. What do you usually serve it with ?

Just a few guidelines when you do make this. I think it is 1/2 can of the frozen lemonade concentrate (but it really helps if the concentrate is thawed), 1-2 tbsp of the lemon juice, and something like 1 cup of honey. Or maybe it is 1/2 cup of honey. And then just sprinkle in the dry ingredients. Like you, I typically just guesstimate ingredients, which is why I like cooking but hate baking.

As for a side item, this is where I struggle a little bit. Usually we just make some sort of veggie. I love Brussels sprouts with lemon juice, but my wife just steams some broccoli or goes with a mixed veggie thing. I used to make an orange chicken that had a flower coating with orange zest and topped with a slice of orange and orange juice. And I'd serve it with orange glazed (see a theme here?) Brussels sprouts and carrots. But that recipe is buried in one of my cook books and I haven't made it in ages.
 
Kat! I do a chicken stuffing casserole that is almost your recipe....upside down with cream of chicken soup on top of the chicken, then ritz cracker crumbs. It's my kids' favorite dinner.

Heather.....OOooooo.....SNIP SNIP! That equaled an entire weekend of steak dinners and guy movies for DH. He did not move....just yelled....Honey the Fast and the Furious is over now! Could you put on Gladiator now and bring me another beer? Snip snip is the only time I yield to such commands.
 
I absolutely love it! I missed it super hard the two months I was off my feet to rest a foot injury. I had no idea how fast I'd get outta shape after that. Ouchies! But it's great to go and our center is run by some fabulous people, which makes me even happier!
That's great! I love it too..and my center is wonderful. It seriously looks like a spa in there and the owner is so sweet and intellegent..great place to work out. :thumbsup2

That sounds soo good! Crecent rolls are my nemesis.esp. when they are filled with deliciousness like that..yum!

I had a good week..worked out 4 times, watched cals..so as always, i must see if its a week where it shows the hard work tommorow..or if i have to wait a week and see results..thinking positive here!

Ditto on being sick! I've had the itchy throat, congestion, headache, back ache for days now. I hope I'm not getting anything too serious! I just can't afford to be sick w/ a newborn and a three-year-old! Ugh!

Oh, and I love that your username is after SpongeBob! My DD LOVES sponge bob! I can not tear her away from the TV when it's on! I think my DH secretly like it, to! :rotfl: I find them watching it together all the time!




Well, I am just completely dreading weigh-in tomorrow! I've done ok this week as far as working out goes...worked out 4 times...will make it 5 tonight...even though I'm sick and don't feel like it! But I have done HORRIBLE w/ my eating habits this week! I haven't gone over my WW points YET...but unless I eat nothing but fruits and veggies until Monday, I think I'm doomed!:scared1:

My "Turn Ons" ( ;) ) include, but are not limited to: Crafts, Organizing, DISsing, all things Disney and Disney Vacation related, free dining, Miss Piggy, losing weight, comedy,humor,laughing, HGTV/Food Network, shopping for smaller sizes (bonus when I actually have $$), diet Pepsi, candles-that-make-my-house-smell-like-I'm-baking-but-I'm-not, pin trading, e-baying, Craft stores/craft malls/boutiques, , naps, chocolate, lip gloss addict, puppys and doggies (not a cat person), overdoing the Christmas tree decorating, , "my time", bookstores, cosmetics counters, white teeth, nice people, surprise gifts, and Disney everything (did I say that already?), vacuums that actually work- mythical creatures they are!

My "Turn-Offs" are: Rude pissy people, Rude pissy relatives, relatives who pop over for a visit, relatives who pop over and want to be fed, Carbs, people with matabolisms, people who LIKE to exercise, crowded WDW busses, lines at WDW, love bugs, humidity, smog, cigarette smoke in non designated area, blisters (do you see a wdw trend?), wrinkles (on me), cat pee, poopy blow-outs on airplanes, pink eye, all forms of exercise or exertion, having to take DD to DR. when I want to DIS, spiders, all vacuums I've ever owned, not being able to eat sugar, my thighs, my formerly great bum, my double chin. OHHH, I could go on!


I grew up in Brea California. I do daycare for a living and love that "job" a-lot! Before that I was a hair stylist for 9 ish years, before that I was a dental assistant for 12 years. I'm 39 years old and serve in Young Women's at Church (LDS in case you haven't figured that out yet) which I totally enjoy!!!! Love Salt Lake City to pieces!

I think that the flour tortillas would be better than the corn... I just use corn for calorie control. We had found some that were 30 calories a tortilla.

I got the chicken stuffing recipe from a friend like 15 yrs ago, and have modified it for low-calorie.

pigget, that crescent-roll meal idea sounds wonderful. May need to look into that...

Some side dish ideas:
Mashed Cauliflower:
Cut up a head of cauliflower into pieces and boil for 30 minutes or until super-tender. Add 2-4 Tbsp fat free sour cream, 1/2 Tbsp of light butter, salt, pepper, and 1 Tbsp of parmesan cheese, and blend with a hand mixer just like mashed potatoes.

My fav side veggies other than that are
-french cut green beans from a can (about 45 cals depending on can),
-artichokes w/ 1Tbsp light butter for dipping (about 160 cals),
-frozen sliced okra pan-fried with a bit of cooking spray and seasoning,
-1 potato per person sliced very thin along with 1/2 onion per person and pan-fried in cooking spray with salt and pepper (about 100 cals),
-a HUGE green salad (about 100 cals),
-steamed frozen broccoli florets

I usually eat dinner alone since Mr Kat works until 9:30 most nights, and I am ready to gnaw off my own arm by then, so a lot of my ideas are for singles. I also have a single serving microwaveable steamer pot that I got from Pampered Chef that REALLY helps with steamed side veggies.

Some of my other quick/fast food dinner favorites for a single or a person on the go:
-Hungry Man Boneless Chicken Wings and Cheese Fries meal (540 cals)
-Chicken Breast meal from KFC w/ mashed potatoes and mac&cheese (500 cals if you remove the skin and throw out the biscuit)
-3 mini cheeseburgers (I get them at Walmart) (375) and a side item
-Banquet Original Fried Chicken 2 drumstick meal (420 cals)
-12 inch roast beef subway sandwich, no cheese (580 cals)
-2 Stuffed Tilapia (also Walmart, in the fish case, and only $.88) (110 cals in each), artichoke, steamed cauliflower (about 350-400 cals)

We live in central California but hope to live just about anywhere else after I retire. I've been happily married for 23 years. My stepsons are grown and married and are great kids. My son, 26, still lives with us. He is bipolar and has an up and down life that he shares with us, even when we don't want it. I've been a workaholic my entire adult life so I have no activities/enjoyments outside of work, although I do scrapbook. We love to vacation, we take one trip per year when we take our family and we do one trip per year, just DH and I. DH and I both want to see as much of the world as we can before we retire and have to live on a fixed income.

And I'm an "almost 1 year" breast cancer survivor and I love the Peeps.

This is a picture of my 3 favorite guys. Stepson Brian (31), son Bryceton (26) and stepson Neil (28). This was taken 6 months ago at Brian's wedding on Maui. Neil got married 3 years ago and is the father to our one and only grandchild.

We live in the city of Fresno. Home to smog, very hot summers and multiple gangs. There are parts of California which I truly love but this is not one of them.

My first practice husband and I lived in Missouri. I came to California to recover from that marriage and ended up marrying a local here and haven't pulled up any roots since.
 
Ok..here is an updated bio..

I am NEWLY 30 with a live in boyfriend ( I've been with him for 3 years) currently between jobs but hoping to start in the mortgage business next month, I have a cat Molly and a dog Chief...I do own my own townhouse, so I am pretty proud of that...I just started knitting and spinning and enjoy CURVES, tv, reading and the PEEPS!!! and of course..DISNEY! :)
