DISappearing Peeps...A fastpass to THIN! Part 2

Good morning peeps. I really should get up earlier. You guys were posting like mad this morning while I was still in my cocoon with my warm little doggies snoring next to me. DH gets up and leaves for his business at 4:30 so my best sleeping time is the 2-3 hours after that. Two adults and 2 dogs in a queen size bed is a little cramped.

What am I cooking tonight. Nothing. I do not cook. From the time DH and I got married back in the disco era, I have always worked 6 days a week, 12 hours a day. So DH does the domestic duties as he closes his business after 8 hours each day. He's not a great cook but it beats having to do it myself. He's been trying really hard to make new things since I can't have fat anymore and I love him to death for being such a supportive partner. I wouldn't be as good if the shoe were on the other foot.

Major gripes. Naturally skinny people. And bad employees.

And does anybody know what this Saturday is? Anybody? Bueller? Bueller?

:scratchin I'm going to venture a guess and say that the Peeps are turning one-year old?? I'm probably waaayyy wrong though...

This Saturday IS our birthday!

HERE is my goals I wrote one post one of this thread....

My Goals:
1. 30 pounds in 6 months is my weight loss goal. (I’ll re-evaluate this, but a minimum 30)
2. Become healthier through eating right and exercise
3. Get back into my size 9/10’s and look HOT in a bikini by Summer 2007!!!!


Now, I have a achieved none of them...except maybe looking "ok" in a swimsuit for my size, but that wasn't my intention or goal.

I've lost a total of 5 or 8 pounds depending on the day or time :scared1: TOTAL

I am sort of healthier and I do exercise more often.

So NOW I'm a little bugged with myself and need to get going! I totally remember how motivated I was in those first weeks. I need to re-kindle that.

Well, if it is any consolation to you at all, just think of the scores of people this thread has motivated to lose weight. So even though you have not reached your goals, you have helped many others (myself included) work towards theirs!

I guess I forgot to quote the Calvin Klein comment, but unless you can find the purple undies that Michael J. Fox was wearing in Back to the Future, I'll just stick with my Fruit of the Looms or Haines, thank you very much. I don't need no fancy shmancy undergarments to make me happy. And just because they are old, doesn't meant they aren't clean. So I think I’ve got the "wearing clean underwear if you’re in an accident" thing covered as well. (Ok, this is officially one of the most unusual conversations I've ever had.)

THANK YOU! You're right! I have thought about that a lot. The support on this thread is amazing. We've seen pounds lost and gained, babies born, a divorce, plenty of drama, fabulous friendships formed, and awesome friendships formed.

The underwear thing is kind of a mars/venus topic. But Back to the Future is one of the best movies ever! I had forgotten about the Calvin Klein parts of the movie :rotfl2:

Wendy...I'm with you sister! Lets try and rekindle the weight loss magic. I think we need to set itty, bitty goals at first. Maybe trading in a diet puppie for a glass of water ? Today I sent all the halloween candy to work with my DH. My kids have no idea and stopped eating it last week. The only person who eats it is ME ! No more peanut butter cups for this girl ! See an itty bitty step. To quote Melinda..."easy peasy lemon squeasy".

Come on people....I need more healthy dinner ideas ??? Some domestic goddess must be cooking something out there.....:confused3 , Chicken...salmon...anything ???

I too achieved nothing. Except producing another offspring and complicating my life further. It's all good though.

Sooooooo, DH went to the Dr. on tuesday for his consultation for the BIG SNIP. Next month he has the proceedure done.

We went to Lowes to purchase our flooring materials. We picked out a nice ceramic tile a few days ago. It was marked down then at 1.39 a tile. I need 612 of those babies.

When we went to buy it yesterday, it was .50 a tile!:cool1: That's 577.00 dollar savings! That stuff never happens to us! Never!:banana:

My son went to an after school function yesterday and they had face painting. They made the kids look like pirates. Mustaches, beards, gotees, etc.

Last night went to wash it off. Nothing. Wasn't budging. I was so angry, I didn't send him to school today. The kids who have been picking on him would of had a field day. That's a whole nother story. I'm ready to call the police on a 13 year old kid, that is soooo sad.:sad2:

The school said no one else called to complain. I'm talking permanent marker. Someone grabbed the wrong pen.:mad: :mad:

I tried everything I could think of. I read about toothpaste, I'm gonna try that next.

I guess I'm considered a domestic god, because I'm the cook in our family. (My wife has the baking end covered.) Most of the meals that I make are simple. Try mixing crushed up corn flakes and ranch dressing mix (the dry powder) to bread chicken breasts. I usually just pan fry them, but you could also bake them at 350 for 40-50 minutes (depending the size of the breasts).

One of my all time favorites is mixing frozen lemonade concentrate, honey, lemon juice, thyme, and dry mustard. Soak chicken breasts in that mixture for ~1 hour to marinade, and dump the whole concoction (chicken and all) into a 9x11 pan and cook for the standard 40-50 minutes at 350 degrees. I can get the exact recipe for you if you would like.

A lot of times I'll make blackened chicken breasts (I like cumin, black pepper, white pepper, and other various spices) for myself and just chicken with a little Lowry's for my wife. I'll make 2 breasts for each, and the leftovers get sliced up for sandwiches or chunked to put on top of salads for lunch.

If you have a grill, you can grill the chicken with any sort of mesquite dry rub. And then the last 10 or so minutes of cooking baste then with your favorite BBQ sauce (I personally like the Jack Daniel's BBQ sauce becaue it has a little bit of a kick to it).

I'll also do basic butterflied, boneless pork chops on a grill, basting occasionally with BBQ sauce.

Hi Pakey. Why Pakey? My nickname has always been Jelly. Always. I LOVE jellies of all kinds. Even jam. My brothers gave me the nickname and it stuck. At least they didn't call me Smuckers.

When I was young, my little brother could not say Faith. It came out sounding like Pake. From there, somebody changed it to Pakey and it stuck. My parents never called me that but my siblings and friends did. As I got older, I became anorexic and my nickname was Bones through all of my 20's and 30's. Since I no longer have a problem with that, it just went back to Pakey.

I think Jean Robert is my most despised survivor player of all time. He just grosses me out. He'll probably win.

my screen name is due to the fact that i am obsessed with SpongeBob SquarePants and that i have 5 kids..
 
Another couple of chicken recipes:

Salsa chicken.
Take a frozen chicken breast and throw it on the grill... after a few minutes, season w/ salt, pepper, and any kind of Mexican seasoning (taco, fajita, plain chili powder, chipotle seasoning, etc). When it is done cooking, place on aluminum foil w/ one can of mild green chilis, a nice helping of salsa, and cover w/ 2% milk cheese. Serve w/ fat free refried beans or black beans.

Chicken stuffing casserole
Spray one casserole dish w/ Pam. Spread a can of ff cream of chicken or cream of mushroom soup on the bottom, can also add more mushrooms if desired. Make stove top or other stuffing on the side, using only water. (I usually do 2 servings of stuffing to one chicken breast = 1 person). Spread stuffing over soup. Add chicken, sort of mushing it down into the stuffing -- you can use whole breasts or chunk it into piecese. Bake at 350 for 30-45 min or until chicken is done. For the last 5 min of baking, I also melt mozzarella over the top, but that is optional.

Crock Pot Chicken Enchiladas
Throw 2-3 chicken breasts in the crock pot w/ enchilada sauce, a sliced onion, can of green chilis, cilantro, lime, and any seasoning you want (hot sauce, etc). Cook all day until you can shred with a fork. Spread enchilada mix into a shallow wide casserole dish that has been sprayed w/ Pam. Roll the crock pot mixture into corn tortillas, cover w/ sauce, and bake for 10 min at 375. One tip: make sure tortillas are wet w/ enchilada sauce before filling and rolling, helps keep them moists.
*This recipe can be done w/ taco seasoning and used for chicken tacos, if you don't want to deal w/ baking the enchiladas.

And one Vegetarian (and microwave!):
Mushroom Stuffed Eggplant
Cut eggplant in half lengthwise. Place face down in 8-inch microwave dish. Cook on high for 4 minutes or until almost tender. Cool for 5 minutes.

Scoop out pulp and place on cutting board. Chop pulp coarsely. In large bowl, combine pulp, 1 cup diced mushrooms, 1 diced onion, bread crumbs (I use as little as I can to get a good consistency, usually 1-2 pieces of toasted bread), parsley, and garlic. Mix well.

Fill eggplant shells with equal amounts of pulp mixture. Place in microwave dish and cover with plastic wrap. Cook on high for 4 minutes or until vegetables are tender.
