I'm having a dinner party on Saturday and their will be 8 adults.

Please give me your best Chicken recipe.

Easy, peasy, please. You know, smells good, taste great, looks like you slaved all day kinda recipe. :laughing:
 
I do homemade chicken parmesan by getting boneless, skinless chicken breasts and pounding them until they're about 1/2 inch thick. I beat an egg, dunk them in it and coat them with extra crispy oven fry. Bake for 20 minutes at 350 degrees. Top with mozzerella cheese and spaghetti sauce and bake it for ten more minutes and serve over angel hair pasta.

I have 2 really good chicken recipes that I use... One takes a bit longer than the other, but its so worth it :) !

Artichoke Chicken:
Pound chicken breasts until about half of their original thickness (1 per person) place in a baking dish in a single layer. In a bowl, mix 2 cans of drained artichoke hearts, 1/3 cup mayo, 1/4 cup sour cream, fresh Parmesan cheese, salt, pepper and garlic. Mix it well, then spread over top of the chicken. Cover with foil, bake @ 350 until chicken is cooked through. Uncover, sprinkle a little more Parm and put back in the oven til cheese has melted. This is great with crusty bread. I don't really measure when I cook... so the measurements aren't exact, you can add more or less of something to your taste.

Spinach Chicken
Thaw 2 of the small boxes of frozen chopped spinach. Squeeze dry. Set aside. Pound chicken breasts (same as above) set aside. Cook bacon (12 pieces--if doing 8 pieces of chicken) and set aside. You want the bacon to be cooked through, but not super crispy. In a bowl, mix 1 block of softened cream cheese, 1/2 c mayo, 1/2 c sour cream, the spinach, 1 c cheese (I use either white cheddar or Parmesan) salt, pepper and garlic. Crumble 4 strips of the bacon and mix it in. Spoon some of the mixture onto each piece of chicken, roll it up, wrap a piece of bacon around it. Set in a greased baking dish. Repeat. If there is any spinach mixture left, spoon over top of the chicken. Cover and bake, about 45 minutes @ 350. Remove cover, top with a little more cheese and bake til cheese has melted. This is soooo good... If I don't have bacon, I don't put it in. You can do it with light mayo/cream cheese, etc if you want. Again, measurements aren't exact - this is great with hot crusty bread... mmmm... :) Let me know if you have any questions!!
 
Parmesan Cheese Chicken

Take boneless chicken breasts
Mix together mayonnaise and parmesan cheese
Spread the mixture over the chicken
Sprinkle bread crumbs on top

Bake at 425 for 20 minutes

So easy and so good!
 

Chicken Divan
1 pkg. frozen broccoli spears
2 boned chicken breasts (or 2-3 boneless)
1 can cr. of chicken soup
1/2 c mayonnaise
1/2 tsp. lemon juice
1/2 tsp. curry powder
1/2 c. shredded cheddar cheese
2 tblsp. melted butter
1/2 c. soft bread crumbs

cook broccoli in boiling water. drain. arrange in shallow 1 1/2 qt. baking dish. simmer chicken in small amount of water 35 min. or until tender. drain, break into strips and arrange over broccoli. mix next 4 ingredients and pour over chicken. sprinkle with cheese. mix butter & bread crumbs. sprinkle over cheese. bake 25 minutes at 350º. serve with rice.

You will have to double or triple the recipe for 8 adults, but it is DELISH! and easy :thumbsup2 You can cook the chicken the day before, mix the mayo, lemon juice, curry & soup the day before too, so it's ready to go. buy pre-shredded cheese and you pretty much just throw it together the night of the party. Good luck!
 
The first thing that popped into my head was Chicken Parm.

Super easy, very yummy, and impressive to the guests.

Chicken Dressing

3 Oven Roasted Chicken Breast
2 boxes of Stove Top Stuffing
1 Pan of Cornbread
1 can of Creme of Chicken Soup
1 can of Creme of Celery Soup

Roast chicken in the oven and set aside, can be done ahead of time. Make a pan of cornbread, box mix is fine. That is what I use. also can be done ahead of time. Shred chicken. Mix Cornbread, stuffing, Creme of Chicken Soup, Creme of Celery Soup and shredded chicken in a large bowl. Add water, about 1/2 can to 1 can, to moisten mixture. Bake in a 13x9 dish at 350 for about 30 mins. Serve with Chicken gravy.

4 skinless, boneless chicken breast halves
1/2 (8 ounce) package cream cheese, sliced
4 slices bacon
1 teaspoon chopped fresh chives
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup milk
1 teaspoon lemon juice
1/4 teaspoon ground black pepper
1 pinch salt
Garlic powder to taste



Directions
1. Preheat oven to 325 degrees F (165 degrees C).
2. Pound the chicken breasts until flat. Put a slice of cream cheese and 1 teaspoon chopped chives in the middle of each breast and roll up. Wrap each rolled breast with 1 slice of bacon and secure with toothpicks. Place in a 9x13 inch baking dish.
3. In a medium bowl, combine condensed soup, mayonnaise, milk, lemon juice, pepper and salt. Mix until smooth, then pour over chicken.
4. Bake in the preheated oven for 1 hour, or until no longer pink and juices run clear.

just did this today. It was really good! Use Hellmans. Also get some parchment paper and use that on a baking sheet so you'll have almost no clean up. It's best if you get really good, organic, fat chicken breasts. If you are baking more than four, you'll need to bake a little longer.

I also use this same recipe on tilapia, so good. my husband asks for it all the time.

I use this on my talapia and catfish, never thought of putting it on my chicken. :goodvibes

1- bottle Wishbone italian dressing
1- bottle Kraft creamy italian
1-1/4 c cooking sherry
Mix together in a plastic bag and add boneless, skinless chicken breast and let marinate over night.

Grill....This is great. If you want you can have the breasts tenderized but I think it looks better if you dont. I got this recipe from a caterer. We served it at my sisters wedding.

I serve it with brown sugar bacon green beans ands mashed potatoes.
