CP really is wonderful for dinner. The food is fantastic. I would do what the above poster suggested and do the early seating (7 or 7:30AM) at Chef Mickey's for breakfast and do CP for dinner. With an early breakfast sitting at Chef Mickey's you can still get to MK before it opens via the monorail (don't do this on an EMH morning though).
Otherwise you could always reverse it and go Chef Mickey's for dinner.
Another option is to take a quick ride on the monorail to any of the monorail resorts for dinner. Here are your choices:
Grand Floridian: 1900 Park Fare (Cinderella, Prince CHarming and company...buffet); Grand Floridian Cafe (a la carte TS); and of course the signature places, Citrico's and Narcoossee's but those are more expensive.
Polynesian: Kona Cafe (a la carte TS); Ohana (family style all you can eat dinner)
Contemporary: Chef Mickey's as mentioned above; The Wave (a la carte TS); signature restaurant California Grille
Or, you could always take the boat to the Wilderness Lodge and dine at Whispering Canyon Cafe which is supposed to be great for kids. They have the all-you-can-eat skillet option there plus an a la carte menu.
Another option is the boat to Fort Wilderness Resort & Campground. They have Trail's End buffet, which is less expensive for TS.
So as you can see you have many options, considering all the resorts that are easy to get to from MK. And it is also very easy to get back to the park for evening activities.
