Dinner for DHs birthday

I want to take my DH to a special dinner for his birthday. We are going September 29-October 5. His Bday is 10/5, so it will be the last thing we do before we leave the world. I want to make a big deal out of this meal. I have time to budget money for this as it seems that my Dad is buying us Seasonal Passes this month.
A little story on the DH, his DD is a doctor and he was raised on really really nice food (i grew up on BBQ chicken and he grew up and veal and venicine). So I wanted to save the gourmet meal until last. I wanted to do V&A's and possibly Chef's Table, but I think that being $165 is too expensive for a meal that we would have to pay gratuity on.
So tell me what restaurant at WDW would you suggest? And about how much do you think I would need to budget (realistically please) for this meal? Thank you

Does your DH like steaks? How about Yachtsman Steakhouse?

You could do a wonderful meal there with all the trimmings for $250 or so.

There is also, Bistro De Paris, besides their regular menu, they also offer a prix fix menu with a wine tasting offering. I think that the prix fix is $110 per person and wine is 60 or 70.

Another GREAT time would be Party for the Senses during the Food and Wine Festival on Saturday night the 4th if it is happening that night. They have famous / reknown Chefs from around the country come in along with wine tasting. I think is is $125 pp

Flying Fish was great and we ate everything but the kitchen sink and with our DDE card were out the door for $185.90

Also, depending on where you are staying.....maybe room service if you have a balcony room with a view? That can be a wonderful time, depending on the resort.
