Dinner for a Large Group?

My husband used to sing with a group that put on cabaret-style dinners for 300people. We had a elementary school kitchen with an industrial-sized oven. We would buy frozen lasagnas from Costco. Depending on how big you want the pieces, it's easy to figure out how many to buy (we would cut ours into 8 pieces). You can also get one or two that are meatless. We would put as many in the oven as would fit to cook them initially. Then we would start rotating the cooked ones through the oven for a few minutes at a time to keep them warm until serving time. We would also buy huge bags of salad, Italian dressing, and breadsticks or rolls. Dessert was a packaged item like ice cream bars or ice cream cups. It was relatively easy and our patrons loved it. One year we switched to a catered dinner. Many people requested that we switch back to the lasagna for the next year, which we did.
