Is it possible to be able to eat good meals both in the different parks and in the Disney resorts without making PS ressies around Christmas? My daughter and I enjoy being spontaneous and do not particularly want to tie ourselves down by deciding where to eat all, or even most, meals in advance. Thank you all for helping me out with your opinions.

Call in the afternoon. Either you'll get a PS and be ahead of all the walkins or you'll be told the restaurant is totally booked for the night and you can try somewhere else. Makes sense even if you're calling an hour or 2 before you want to eat.
 
I never make PS except for the dinner shows. Then again, I don't plan itineraries either other than what park, which day. I love the spontanaeity. BUT, I know this won't be my first, last or only trip to WDW so it's no big deal if I miss out on something this time, there's always next time.

Now that said, I have not gone at Christmastime either. You should be able to check at Guest relations when you arrive at the park and make PS for the day at that time. I personally don't mind the walk in wait, I usually use it for rest time or to people watch.
 
Oh, and one more thing. I do my big meals at lunch time or around 1 or 2 in the afternoon. Less wait time then.
 

You can get in just about anywhere if you eat at odd times. We hit most of the sitdowns about an hour before the lunch time ends. This way we get the cheaper prices, avoid the crowds and get a nice break. Following this strategy, we rarely have needed to return to the room for a rest. For the most part, eat very late or very early, and the crowds aren't much of a problem

While I do agree with the other posters, keep in mind that Christmas/NYE week is the MOST CROWDED week throughout the entire year. (Eating at odd times may not help during this time. ;)

I will be there this Christmas, and I do plan on making PS ressies for the restaurants I really want to eat at.

That's my suggestion to you. Make PS's for the restaurants you can't afford to miss. You'd be surprised at all the booked restaurants or the long waits you'll have to endure if walk up's are even available.
If you choose not to make PS's, remember not to be picky about where you eat! Popular restaurants and Character meals will probably be booked around Christmas time!
