We are staying in disney for 7 days,then doing an 8 day cruise and then 2 days at the Doubletree hotel when we come back from the cruise.Can we still use any credits we might have left on the dining plan if for example we went to Disney Springs or will we have to use them in the first 7 days

Your dining plan expires at midnight on the day you check out, so you will not be able to use them after your cruise.

You need to use them up before you leave. Hit up Starbucks and get a bunch of pastries to go if you need to use up snack credits.

That will only work for OP if those Starbuck snacks are individually pre-wrapped. You can't take opened food onto the cruise ship if it's a Disney cruise.
