Arriving for 1 night at Coronado Springs Resort before transferring to OKW for remainder of stay. Worth it to add on the dining plan for the one night (will be there all day, arriving early), for 2 adults, 2 children at around $200? Or just pay as we go? Also, the refillable mugs. If we get them, do we get another set once we check into OKW the next day?

Refillable mugs wills be good when you transfer to OKW.

"Worth it" is rather subjective, although I have done the deluxe plan for one night because the credits can be used over the course of two days. That would cover two TS dinners (check in day and check out day) and a character breakfast in most locations on the morning of check out or a TS lunch on arrival day. It also includes two snacks per person for the one night and those credits could be used until midnight of the day you check out. The DxDP is generally considered to be a better deal than the DDP, especially for just one night.
 
If you splurge for the deluxe dining plan, you could have 3 separate table service meals over 2 days. You could really maximize it by eating at some of the most expensive character dinners! Do the math, I bet you would come out ahead if you planned correctly!

Also, you get an alcoholic drink with each adult table service, so that also adds value
 
Personally, I love dining plan. It might not be "worth it" financially, but the convenience is soooooo appealing AND I love having it all played for before we ever arrive. To me, it makes the trip seem less expensive. So I would add it. Even if it was just for a day. Mostly, because I like everything to be consistent and streamline during my stay.
