Dining Plan - Is it just me?

I know this won't be popular but before you flame me let me say that I love all things Disney and I AM happy for those families who are saving money through the dining plan. It just wasn't for us due to the # in our party (and ones that wanted to eat any TS), scheduling, ages etc. That was totally our choice. Another trip and we might try it. I am just reading so many posts here AND on other boards about how hard it is to get in to places, how many restaurant CM's now seem to think that because their tip is automatically included that they overcharge, and don't feel like they need to give more than adequate service since they're guaranteed a gratuity. Please, waiters and waitresses everywhere don't send me hate mail. I KNOW you have a hard job and often you get people who stiff you, you're underpaid and so you depend on tips. BUT, not all are good servers and seem to get lax and not nearly as friendly when they know they have a tip coming regardless of how they act or what they do. They're upping ages for kids. Seems like the plan is going a bit awry and causing lots of changes are reprucussions from it.
