Anyone have any suggestions for the best restaurants to chose when one is dieting at WDW?

I think you can get healthier options at any restaurant. For example, if you order a burger or something like that, you can ask for fruit instead of fries. If I'm remembering correctly, the park maps use a picture of an apple next to the name of the restaurant to let people know that they can get healthier food there.

As long as you eat sensibly, I wouldn't worry about intake of food as much being pleased with the increased exercise that you will get while at WDW. There is so much walking that I've found that I normally drop a couple of pounds while on vacation there. I always volunteer to be the one in my family who walks ahead quickly to get a fast pass for everyone. Avoid burgers and fries and walk, walk, walk....

my diet concious SIL reccommends CA Grille and Citricos for lighter foods.
 
A couple of suggestions:

The food court at the Land in Epcot has a wider selection of foods than most of the counterservice places.

At any counterservice restaurant, you can get a little bag of raw carrots as a substitute for french fries.

You can get fresh fruit at the parks to eat instead of the usual snacks--the stands that come to mind are near Hall of Presidents in Liberty Square at MK, and across from the Beauty and the Beast theater at the Studios.
