I am making some meals for someone who is diabetic and I'm looking for ideas!!! Can you help??

Anything low carb is always a good option for Diabetics, especially Type II who use pills to control.

I'm a Type I (Juvenile, insulin-dependent), so what I eat is not a big deal, since I take insulin to match the carbs of the meal before I eat.

That being said, low fat, low carb, and low sodium are all qualities of a good diabetic dish. Grilled or roasted chicken dishes are my "go to" meals. Add some good spice rubs, and it's the perfect main dish.
 
I just had to do this! We had a friend over who had just gotten diagnosed with diabetes so I was trying to be cautious/considerate...but was having a hard time coming up with ideas.

I made a salad bar type dinner. I boiled chicken and put just a little salt and pepper on it and chopped it up, and had chopped tomatoes, black beans, shredded cheese, corn, avocado, lettuce and a variety of dressings and everyone got to build their own salad.

Another day I made them a veggie frittata, which seemed to work since it's mostly protein.

I use salads and veggies to fill out my meals.. avoiding large amounts of carbs like corn, peas, and potatoes. I am a big fan of herbs and seasonings too.
Proteins like lean meat, chicken, fish and eggs are a good base start for a meal... just don't add heavy bbq sauces ( sugar based)
Carbs such as pasta, potatoes and rice should be part of the meal.. but a smaller portion. Rice is sneaky.. 1/3-cup is a portion.. that is not a whole lotta rice. ... so I put veggies in it to stretch the amount of rice.

Desserts.. always the big question for people cooking for diabetics. There are a number of sugar free products on the market. However they are not always low carb.

Diabetics can eat most anything... but having good food choices makes life easier.

that being said... I am a sucker for Chinese food.. man that always blows my glucose avg. ah.. yummmmmmy!

Balance

Diabetics (depending on their insulin too) have to time the insulin to metabolism. The fallacy is diabetics cant eat certain foods, and that is not true. They have to prepare to eat certain foods. Whether they are mutilple injection therapy, a pump, they have to make sure the sugar in their blood stream metabolizes in zones of time.

What does that mean for you?

The mistake my mom made was

oven fried chicken, baked potato and a vegetable medly (beans, peas, corn)

My mom tried, but she missed horrible. The above chicked was coated in bread. In this meal we have protein and carbs. That is it.

Even some veges are higher in natural sugars, Ttomatoes, Carrots, Peppers)


If youre attempting something balanced for your guest I would suggest


A grilled chicken of some type. Marinate it! YUMMO (sorry for the R Ray comment)

Garden Salad with a variety of fresh greens, carrots, tomatoes, with an olive oil vinaigrette (avoid the fatty dressings like blue cheese and ranch). I like the Good Seasons Italian dressing. Just use Bertolli Extra Virgin Olive Oil (very affordable and good for every day cooking) and (I like Pompeian) Red Wine Vinegar for a pumped up dressing.

Grilled Veges such as Broccoli, Cauliflower etc. (Heck, you can even make a cheese sauce, but have it on the side)

Baked Taters with fixens on the side

It sounds plain, but if you use quality ingredients, it makes a huge difference. You can even marinate the chicken in some Italian salad dressing for about 4 hours before grilling. Real Good and it will tie in well with the salad.
 
I've been type two for years and I have to agree with a lot of what has been said already. We can eat anything in moderation, but it is easier if we have good choices. I am a picky eater on top of everything so I understand I am particularly difficult to please.

Chicken is good (except for fried) an almost any dish. But the protein isn't that important other than for overall health. If steak is the main dish, I'm fine with that. Also pork, turkey, or any kind of fish. What matters is the sauces etc. They can add a ton of carbs. Plain or with low carb sauces is good.

Avoid white starches. Potatos are not good for diabetics. This is my downfall too. If I see a baked potato, I eat it! Pasta is another problematic area.

Having lots of crisp veggies is good, avoiding corn and carrots as they are pretty high carb. Salad is always good, the darker the greens the better they are for you. That applies to everyone, not just diabetics!

Dessert is something lots of us pass on or eat a small portion. I tell people not to worry about it and don't prepare anything special for me. I will have a few bites of what everyone else is having or go without depending on how many carbs were in my meal.
