Diabetic Question

My BIL is going to be going to Disney for the first time and he is a diabetic. Can he make specific requests when ordering meals? Would this work at both counter and sit down meals if so? Thanks for the help.

It should work fine at the sit-down meals, not so sure about CS.

My best friend did Disney with her diabetic 6 year old daughter last year. They count carbs in addition to lots of insulin. She found the sit down restaurants much better than the counter service restaurants. At many of the sit down restaurants they got to speak with a chef, the counter service places no one had much knowledge of diabetes.
