I have been on the Dis for quite awhile but just found this area today! :goodvibes

Does anyone have any easy Diabetic friendly cookie or dessert recipes?

One side of our family has two diabetics and the other one three (this includes me). I found out I had Type 2 about a year ago but did not take it as seriously as I should have (I am now).

I would love :lovestruc to make Diabetic friendly desserts, so as to not be tempted to partake in a not so friendly choice! The easier, the better... baking/cooking is truly not my talent! :rotfl:

I also found out about a book called Sugar-Free Desserts: Naturally sweetened with fruits and juices. Try googling it. I'm not big fan of artificial sweeteners, so I think this would be a great book to check out. I hope this helps. I'll post more diabetic-friendly recipes if I find any more. Take care!
 
I have some recipes. My husband's uncle was diagnosed years ago, and I always made him a dessert. I have to go to work now, but I will post some later.:)
 
I'm a Type 2 also and have been for 7 years. I do eat regular desserts at the holidays, but make adjustments to my carb counts in my meals during the day so I can splurge.

This is a favorite that I got from WW and everyone in my family loves it (diabetics and non)

Lemonade Pie

8 oz. Fat Free Cool Whip
1 (1 oz.) Package Sugar Free Instant Vanilla Pudding Mix
2 Cups Skim Milk
1 Tub Crystal Light Sugar Free Lemonade Soft Drink Mix
1/3 Cup Graham Cracker Crumbs
3 Packets Splenda


Spray sides and bottom of a 9” pie pan with butter flavored non-stick spray. Sprinkle graham crackers in bottom and up sides evenly. Set aside. In a medium bowl, combine pudding, milk, Splenda, and lemonade mix with a wire whisk until blended well. Place in refrigerator until set (about 20 minutes). Fold in cool whip. Spread mixture evenly over graham cracker crust. Place in refrigerator for at least 2 hours or overnight.
Serves: 6


To save time I buy a low sugar/low fat graham cracker crust at the store and it works very well (then eliminate the graham cracker crumbs and splenda). You can switch the flavor of the crystal light to change the pie around...we like to use lime or orange instead.
 

Ok, finally got out some of my recipes. Here are some that I have made...

Lemonade Pie
1 pkg (.3oz) sugar free lemon gelatin
1 pkg (8 oz) reduced fat cream cheese, cubed
1-3/4 teaspoons sugar free lemonade drink mix
1 reduced fat graham cracker crust
6 Tablespoons reduced fat whipped topping

Prepare gelatin according to package. Refrigerate until almost set. Transfer to a blender or food processor. Add cream cheese and lemonade mix. Blend/process until smooth. Pour into crust. Refrigerate overnight. Serve with whipped topping.

My brief contribution: look into buying Stevia, a natural sweetener. It has a bit of a learning curve (it is some 300 times sweeter than sugar) but well worth it. Buy it at Amazon or health food store. It comes in powder form or liquid.

For instance:

Lemonade: 6 cups of water, 3/4ths cup of lemon juice, one teaspoon of powdered Stevia. I lived on this stuff all summer. NO calories, and stevia does not affect blood sugar at all!

Chocolate milk: buy chocolate-flavored Stevia (I like the Sweetleaf brand). In a cup of skim milk add a few drops of said stevia.

I also add a few drops of non-flavored liquid Stevia to my homemade yogurt; adds wonderful sweetness. Or, add a couple of drops of lemon-flavored liquid stevia for lemon yogurt. Other flavors are available.

Liquid stevia is not real cheap, at first glance. However, a very little goes a long way. There is also a guy on Ebay who sells the Sweetleaf brand: for something like $24.00 you may pick four bottles of the available flavors.
