one of my guests for Christmas is diabetic. What can I make for him that he will be able to enjoy as well?

Sugar Free Pudding Pie. Make a graham cracker crust (the store bought ones aren't sugar free I don't think) but mixing 1 1/4 cups graham cracker crumbs, 1/4 splenda (it's actually usually 1/4 cup sugar so whatever the bakinf "fake" sugar says is equal to that) and 4 tablespoons butter. Mix together and bake for 20-25 minutes on 350 degrees. Let it cool.

Then cut up two bananas and lay in the bottom. Then make a sugar free pudding mix (I have used banana, chocolate and vanilla but like banana the best) and put that on top. Let it set for about 10-15 minutes. Then top with one tub of sugar free cool whip.

I have a key lime pie recipe for something simliar also (let me know if you want that one too). They are really quick and easy to make and so yummy! :banana:
 
Before you make anything, I'd call and make sure that the artificial sweetener you are using will work. My granddad is diabetic and he can't tolerate the artificial sweeteners in most sugar free desserts so they often get thrown out if people don't know =(

If it's using the right kind, he can have various kinds of pies, fruit desserts, etc.

Sugar Free Cream Puffs!

Make a regular pat-a chou(sp) which has no sugar in it. Bake as directed (you can find some great recipes on allrecipes.com. Then for the "custard" make one large box of sugar free vanilla pudding with HALF the amount of milk. Set in fridge for a few minutes- then whip up 1 pint of heavy cream with 1 tsp of vanilla and splenda, equal or can do it with nothing - fold this into the pudding and fill the puffs.
 
First make sure they can have nutrasweet as all the sugar-free puddings are made with it. One thing I like as a dessert is a few strawberries and whipped cream.
 
here ya go...my 14 yo cousin is diabetic and i make the lemon pie for him at every holiday-it's now his favorite.

SF Lemon Icebox Pie

2 graham cracker pie crusts
1 Lg box SF Instant Vanilla Pudding
1 Tub Crystal Light Lemonade
2 C Skim Milk
1 12 oz tub cool whip
mix ingredients 2-5 in a large bowl until well blended, spoon into pie crusts and chill until serving.

SF Strawberry Pie

1 12 oz Cool Whip
1 Sm SF instant vanilla pudding
1 SM SF strawberry jello
1.5 cups skim milk
1 pint fresh or frozen strawberries
2 graham cracker pie crusts
Mix cool whip, pudding, dry jello and milk until well blended. stir in sliced strawberries, pour into graham cracker crusts and chill until serving.
 
A nice fruit tray would also be appreciated. Or add 1 can of crushed pineapple to a sugar free vanilla pudding mix (do not add any milk) and stir! It's really lovely! :)
 
My old roommate loved this caramel apple salad, but he usually had to fight the rest of us for it! It sounds a little strange, but tastes great.

1 box sugar-free/fat-free butterscotch pudding
1 can crushed pineapple, in its own juices
1 (12 oz) container sugar-free Cool Whip
2 large granny smith apples, or 3-4 smaller apples

Mix the pineapple and pudding mix (do not make the pudding, just use the mix) in a large bowl. Chop the apples into bite-size pieces and fold in, then add thawed Cool Whip. Chill for one hour, then serve.

(also good with mini-marshmellows or mandarin oranges folded in.)
 
Here's a site with lots of diabetic and/or sugar-free desserts. I can vouch for the chocolate eclair dessert - I make it often, sometimes substituting banana or lemon puddings.

My mom is diabetic and she's used several of their recipes.

Apple Crisp

Filling:
6-8 tart apples, cored and sliced thinly (peeled as well if you like)
1/4 cup splenda
1 t. cinnamon

Topping

1/2 cup each of: flour, oats, butter, splenda
1/2 t. salt
1 t. cinnamon


Preheat oven to 350 and grease a 2qt casserole. Toss apples, splenda, and cinnamon and place in the dish. Mix topping ingredients until crumbly and well blended. Sprinkle over apples and bake. Start checking for doneness at 25 minutes. The topping should be firm to the touch but may not be too brown since Splenda tends not to brown up like sugared dishes.

Serve with sugar free ice cream or whipped cream.

If you want ice cream to go with that apple crisp, Edy's makes a sugar free (made with Splenda) double churn light ice cream that's actually pretty darn good. My DH is diabetic and that's what I buy for him, though I usually wind up eating most of it! :rolleyes:
