There are some great buffets that also allow for a person to order off the menu. The Wave Breakfast and Captain's Grille Breakfast come to mind. Both are amazingly good, so perhaps that satisfies some of your needs.
I bet he would love Ohana Dinner...the food is pretty darn good...most is at your table for only you....and then the chicken, shrimp and steak come out on skewers...the kids loved this and so did we.....first bread and salad, then pot stickers and wings, then noodles and veggies, then the skewers...for dessert we had the bread pudding with ice cream and caramel sauce on top...the kids had that or regular ice cream ...
I'm not a buffet person myself, but I do enjoy Tusker House and find in general that breakfast is the best of the meals served via buffet if that makes a difference. The others have suggested some great options for character meals that aren't buffet. As far as just plain table service non-signature meals some of our favorites are Raglan Road, Via Napoli, Sanaa, Kona (breakfast) and Whispering Canyon (which has a great all you can eat, non buffet option)
I think compromise is the name of the game. How about you get your CP with Pooh and all the rest are non-buffets? For instance, my H only wanted a very relaxed experience this time with only 1 ADR a day, but I told him I had to have CRT breakfast. He agreed with that one easily. Good luck

Would he maybe agree to a CP breakfast? I'm not a buffet person myself, but like PP kastoney above, I think breakfast food seems to stand up to the hazards of buffet service a little better than lunch/dinner. (And it's slightly cheaper.)

MK - The Plaza (Be Our Guest is also good but much harder to snag an ADR)
Epcot - Le Cellier, Tutto Italia, San Angel Inn
DHS - Sci-Fi
AK - Yak & Yeti (though with the kids you might prefer Rainforest Cafe)
I think that when Dining in Disney, just like at home, compromise is key. There are some really good TS restaurants, but if you want a character meal, many are buffet. If family style is a compromise, and you want characters,

I agree with PP that it's not unreasonable to expect him to compromise for one or two meals, especially if you really want to do a certain character meal. Plan the rest to be things you know he will like.
My DH doesn't like buffets either, but we end up doing at least a couple. If nothing else, each person should get to pick one ADR with no vetos allowed
I agree. Compromise is the key. I am the only person in my family who doesn't like that cheap Chinese take-out food. Everybody else loves it. My husband doesn't like pubs, pub food or a pub atmosphere. I do. We all have to just participate without complaining. It's how we keep that positive juju flowing!
I'm with your husband, I hate them. I don't eat much so it's a waste of money, the food is sitting under heat lamps so is often luke warm and not the best quality. Having said that, when DS was a teenager he could eat enough for 3 people so buffets were an option. I agree with Micca, go to the hotels, even if you do a buffet there chances are they have a menu he can order from and the food is better. Love just about all the restaurants at Epcot and love Brown Derby at HS. Can't think of a TS at either MK or AK I've enjoyed but in all fairness I haven't eaten at many just BOG at MK and Tony's.
