We are on a low carb diet. This is the hardest diet for me to go on since I am not an egg or meat eater. However, I have lost 4 lbs and well on my way to being able to stop soon. I did not have but a few pounds to weigh. DH has a lot to go. I was hoping for some great low carb receipes that are delicious but does not cost a lot. I would appreciate some great recipes that will not break my budget. Thanks!!
 
I'm going to move this over to the W.I.S.H. Forum. I know that there are other on that board who have had sucess with the no-carb and low-carb diets. I'm sure that they can offer you some ideas and plenty of support.
 
Parmesan Tuna Patties

Ingredients:
1 (6 3/4-oz) can albacore tuna
1 tablespoon mayonnaise
1 large egg
2 tablespoons Parmesan cheese
2 tablespoons ground flaxmeal
1 dash garlic powder
1 dash onion powder
1 dash salt

Directions:
Drain tuna. Blend all ingredients in a medium size bowl and form into patties. Fry in oil (I use olive oil, but you may use cooking spray) until brown on edges. Turn. Fry until done.

Recipe serves four. Per serving: 284 calories, 32 grams protein, 15 grams fat (3 saturated) and 4 grams carbohydrate.


Note: Flaxmeal, made of ground flaxseed, is rich in omega-3 fatty acids which appear to help lower the risk of heart disease. Flaxseed adds a mild nutty flavor to foods and should be included regularly in a healthy diet.

I respect your decision but I do not think I will get the same amount of replies here. There are a lot of various recipe threads on the budget board. My whole reason for posting it was for budget minded recipes. I fear I will not get that here.

I have been off & on low carb for 8 years.
Take extreme caution when stopping low carb.
Sudden changes back to full carb will result in dramatic weight gain.

I firmly believe that you must find the diet that suits your body type. My experiences have clearly shown me I need a low carb type diet. My DH is some where in between and his cholestorl does better w/high fiber low fat diet.

So I make alot of things "on-the-side". Like spag. & turkey meatballs not mixed together or chicken & rice in separate serving bowls

Turkey Chili - V8
Prep: 10 minutes
Cook: 25 minutes
Serves: 6


Ingredients:2 lb. ground turkey
1 large onion, chopped (about 1 cup)
2 tbsp. chili powder
1/2 tsp. ground cumin
3 1/2 cups V8® 100% Vegetable Juice (Regular or Low Sodium)
1 small green pepper, chopped (about 1/2 cup)
2 cans (about 15 ounces each) red kidney beans, rinsed and drained

Directions:Cook the turkey, onion, chili powder and cumin in a 4-quart saucepan over medium-high heat until the turkey is well browned, stirring often.

Add the vegetable juice, pepper and beans to the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the vegetables are tender.
