Departure day plans?

Our flight back has unexpectedly been pushed back til nearly 8pm.

we’re staying at the poly (hotel side), but this leaves us with a good amount of time between check out and flight time (I think we’ll be taking the magic express)

what would you do? It’s a Friday and we have two boys (6 and 9 at the time of trip). We arrive the Friday before.

I had been thinking pool in the morning, lunch in Disney springs so maybe we still do this and maybe explore a bit more before heading back to grab our bags and the bus to the airport?

I assume we can leave our bags at the desk even though they won’t transfer them to the airport for us.
 
(Also already looked into moving the flight earlier but there are no good options) I’m thinking a park day will be too much as I don’t want exhausted kiddos at the airport.
 
You can definitely check your luggage with Bell Services/Luggage Assistance and enjoy pool time and/or a visit to DS. Just be sure to return to the resort in plenty of time to claim your luggage - sometimes there’s a line.

Another activity to consider would be mini golf - we’ve done that before when we had a late plane.
 
We've also used extra time to go ride the Skyliner to walk around RIV, then ride back and stop in at the BW Bakery for a treat and then head back to our resort. It's time consuming and something we wouldn't necessarily do otherwise.
 

We booked Epcot on checkout day. We had the opposite happen where our flight was moved up an hour but we don’t want to go to HS (we are staying at AOA). We will barely have 10 am-1:15 pm (Epcot opens an hour-45 mins before posted open).

We may/may not do rides but we will go around and try some flower and garden booths. You have to start back about 45 minutes (transportation+bell services to get bags) in addition to the 3 hours for domestic (4 for international flights) pickup by MDE.
 
If you have extra park tickets to use then I would go to your favorite park, for me it’s MK (It has to be the last park I go to every trip). Or you can explore resorts, or an afternoon in Disney Springs with lunch and shopping and a stroll around. You can’t really go wrong.
 
This happened to us last year and we left our bags at bell services and scored a late morning breakfast at Topolinos and rode the Skyliner to the Boardwalk, took the boats around Crescent Lake, stopped for some ice cream at Beaches and Cream. We talked about how much we enjoyed this so we booked a trip to the Boardwalk in August. We stayed on the monorail exclusively prior to this so maybe a resort hop would be a good idea as well
 
When we had an 8pm flight out in March, 2020, we did something similar to your plans. Breakfast and very early pool time at the resort (POFQ). We took the friendship boat to Disney Springs from POFQ (OPEN IT BACK UP!) after leaving our luggage with Bell Services. We had an early lunch at a QS, and an early dinner at T-Rex using our Landry's card. We UBERed to the airport about 530. We didn't have extra park tickets, or I would have suggested Epcot for festival booths, as Flower and Garden was happening at that time
 
Yeah I think I don’t want to bother with extra park tickets. I would worry to much about our flight moving back up... and if it doesn’t I don’t want melt down level exhausted kids on the flight back.
