We plan to stay at AoA from Aug 22 to Sep 3 (12 days total.) Doing the parks 23 to 2 (10 days). I understand if we purchase DxDDP. It is valid from check in to check out. We would purchase DxDDP for 10 days.

We plan on doing 2 of those ten days in the water parks/at the hotel relaxing/DS. Is it somehow possible to only pay for 8 Park tickets? If so, does it make sense economically? Would we buy two days of Water Parks separately?

Buy a package and I think the Water Parks are included. I'm sure you will get other answers. All dining plans are check in to check out. Are sure you want to eat as much food as offered on the DxDP? We thought the regular plan was too much food.
 
We used the DxDDP the last time we went - we love the meal experiences, we do a lot of the shows/character meetings there plus a few signature dining experiences!. And it's a comfy time off the feet! :)
I realize the water park option comes with the ticket package - but do I need to pay for 10 days of tickets, when we only plan to go to the parks on 8 days? Or can is it possible/somehow cheaper to purchase them separately?
 
You don't get to choose how many days worth of dining you pay for. You pay per night of your reservation.

Tickets are completely separate and you can purchase any number of days you want.

As supersnoop said, the dining plan is tied to the NIGHTS you stay, and it cannot be changed, so you would have 12 nights and therefore 36 TS credits and 24 snacks per person.

As to the tickets, you can get 8 day tickets and add on water park & more and/or park hopping. That would give you 8 days in the parks and 8 entrances to the water parks and more venues. You can use them over 8 days or 14 days. Tickets expire 14 days after expiration. Even if you are only planning two days in the water parks, I believe this is the cheaper option for you over buying 8 day park tickets and 2 day water park tickets.

As others have noted, you cannot choose how many nights you pay for the dining plan. If you add the dining plan to your package, it will be tied to the number of nights you have reserved. So, if you stay 12 nights, you get 12 nights worth of dining credits per person in your party ages 3 and up.

In terms of tickets, since you want to go to the parks 8 days and the water parks for 2, you will want to purchase an 8-day ticket with the water park fun and more option. This will give you 8 park days and 8 visits to water parks, mini golf, ESPN sports complex and/or Oak Trail golf. Purchasing your tickets with the added water park option is cheaper than buying two separate tickets to the water parks.
 
As others have noted, the dining plan will be charged according to the number of nights you are staying. Honestly? I'd make the ADR's that I want & pay OOP.
 
You have your answers regarding the dining plan (DxDDP is quite a lot of food, been there done that) and tickets, but I wasn't sure if you realized how little the price increase is from day 8-10. Isn't it possible that you might go to the park those other days? For such a small amount, you would have the option to visit a park on 2 more full or partial days.
 
Thanks everyone for your answers! :) I do realize now it makes more sense financially to pay for the 10 park passes and just add the water parks and more vs 8 park days and 2 water park days. :)

And for the DxDDP - we are staying 10 nights... so ten days of meals... we added a single, hotel only stay at the end - so we aren't paying for an extra day of meals.
