We have never felt like it was too much food. if you are worried about that, my recommendation would be to schedule a late breakfast/early lunch and then a Signature Dinner. That uses up your 3 credits per day, and allows you to have more rest time in between meals.
That's almost exactly what we'll be doing for our next trip, and our first on the DlxDDP.
We'll be going for a short stay at the Parks after a 7-night cruise. I don't know if we could eat that way for 7+ days (our 'usual' Disney vacation), but for our short 3-night stay it works perfectly. We'll be hitting a few signatures we've passed on before since it would've required foregoing a TS on another day w/ 'regular' DDP - like CRT. We're still only sitting down to eat 2x/day, but burning credits w/ signatures and 'saving' one for b'fast the day we check out (we'll be driving, so no rush, but no park tickets; we'll probably just do Chef Mickey's).
