I think it's definitely possible. What I would do is take the bus to MK and a boat over to FW. The boat from MK stops at both FW and WL, so you can actually check out both resorts very easily. For dinner at FW, I would think Trail's End Buffeteria is a good choice. Enjoying a few drinks sitting in rocking chairs on the porch either before or after your meal is relaxing, too!
At WL, full service restaurant choices are Whispering Canyon and Artist Point. Whispering Canyon is a more fun, raucous, casual sort of dinner with the waitstaff providing lots of entertainment, sometimes at the expense of the diners. Artist Point is a bit more refined, with entrees and wine selections representative of the US Pacific Northwest.
There's also the Hoop Dee Doo revue in FW, but I don't think it would be possible to do that and get the full benefit of MVMCP, IMHO.
