defrosting cake for anniversary??

DH and I are getting ready to celebrate our 1st anniversary in a few days :lovestruc and the top layer of our wedding cake has been sitting in our freezer allllll year (which by the way, has gone by SO fast)! I can't wait to enjoy it all over again, but I'm not sure what's the best way to thaw it out...any suggestions? It's still covered in fondant.

I don't think there is a "best" way to thaw it out. No matter what way you choose, be prepared....it will not taste like it did a year ago. When I thawed out our cake to eat, I barely got it in my mouth before I spit it out. It was NASTY!!!:eek: I can't imagine it would be good....in the freezer for a year??!?!?!?!?! No one I know who has done this has said it tasted good. BUT, it's still fun and it will bring back alot of happy memories. best wishes to you and your husband I hope you enjoy many more years together. :hug:
 
We thawed our top layer about 2 weeks ago... about 11 months before our one year anniversary lol. It was taking up a lot of space. We put it in the refrigerator for about 2 days and it was good to go. It was still very good at that point. I think it will be fun even if it doesn't taste that great lol. If it was wrapped well then I think you might be ok. :goodvibes
 
HAHA I'm going to be afraid to taste mine. We will be in Disney for our anniversary so I'm going to order a replica mini cake of our wedding cake from the Boardwalk bakery. Our cake was so good!
 

We just had anniversary last week. We took the cake out of the freezer, and put it into the fridge the day before. We kept it in the fridge until about an hour before we ate it. It wasn't bad. The cake was a little dry, but filling was still good.
 
I think we got very lucky - the cake tasted great a year later. I left the fondant on it, wrapped the whole thing in plastic wrap (lots of layers) and then in the box in the freezer. I put it in the fridge the day before our anniversary and then on the counter about an hour before we cut into it. I peeled off the fondant before we ate it and it wasn't dry and the filling was really good!
 
I didn't have fondant on mine so it was a bit dry. I'm thinking you might luck out if you just pull of the fondant. It probably acts as a barrier to the freezer burn!

Side note: my friend poured 1 shot of rum per month into her cake and she said it was VERY tasty on the 1st anniversary!
 
thanks for the responses everyone. I'll probably move the cake to the fridge the day before, like most of you have done. I agree that the fondant might have helped insulate the cake, so hopefully it will still have flavor! if not, we can always order a mini cake on our next disney trip (i think it's so cool they can do that)! I'll let you know how it goes, our anniversary is this tuesday :woohoo:
