I'm a teacher and next year's calendar was just released. We get two weeks off at Christmas! My birthday is the 29th so I was thinking about staying that week at Disney. However, it is more expensive then. The other option would be the last week of February. In VT we don't have President's weekend, we have the last week of February into the first weekdays of March for Town Meeting day. This is when we traditionally have gone. I thought, however, post Christmas might be neat. We will be traveling for the first time with our DD who just turned 2 in April..so that is a factor as well (i.e. crowds). We would probably spend a couple of days at the parks, but mostly relax at the hotel and eat out.

Any tips would be greatly appreciated.
 
It is obviously crazy during Christmas, but with a 2-yo I'm assuming the focus won't be on hitting every big attraction. I think the new FP system would actually help you out a bit. Plus -it's great to be there for your birthday!
 
If you plan your park days for after New Year's Day, the parks will be a little less crowded. Avoid New Year's Eve in the parks - that will be a good resort hopping, relaxing day with meals at a resort - avoid DTD, too. The Christmas Decorations in the parks will be up through January 4th and the Christmas parade should be running until then.
