Here's a little more info from the DCL website:

The Disney Dining Plan is only available with the 7-Night Land & Sea Package Plus Dining, which includes stays at Disney Resort Hotels commencing in 2008. The upgrade package must be booked 72 hours prior to arrival. You may not upgrade your package after your arrival. The Disney Dining Plan cannot be purchased separately. It is a component of a Disney Cruise Line® 7-Night Land and Sea Package Plus Dining. Everyone in the room must be on the same package.

2008 7-Night Land and Sea Package Plus Dining

From quick meals to character dining, experience the freedom of choosing from over 100 participating restaurants to fit your family's ever-changing tastes during the "land" portion of your cruise vacation at Walt Disney World® Resort. Best of all, enjoy the convenience of knowing that many of your meals are paid for in advance.

The 7-Night Land and Sea Package Plus Dining includes the Disney Dining Plan, which provides the following for each night of your "land" stay:

1 Table-Service Meal
Includes 1 entrée, 1 dessert (lunch or dinner only), 1 juice (breakfast only) and 1single serving non-alcoholic beverage, or 1 full buffet.*
1 Quick-Service Meal
Includes 1 entrée or 1 Combo Meal, 1 dessert (lunch or dinner only), 1 juice (breakfast only) and 1 single serving non-alcoholic beverage.*
1 Snack
Served at quick-service and snack-cart locations and might include items such as frozen ice-cream novelty, popsicle, fruit bar, popcorn scoop (single serving box), single serving grab bag of chips, single piece of whole fruit, 20-oz. bottle of Coke®, Diet Coke®, Sprite® or Dasani® water, medium fountain soft drink or juice, 12-oz coffee, hot chocolate or hot tea.

How to Book
To purchase the 7-Night Land and Sea Package Plus Dining, go to Reservations. Be sure to use the booking code "DINE."

To upgrade your package, please call Disney Cruise Line® at (800) 951-3532† or contact your travel agent.

Dining Reservations
For reservations, call (407) WDW-DINE (407-939-3463)† up to 180 days prior to arrival. Many of the restaurants are quite popular and book quickly. We strongly suggest you make advance dining reservations. Reservations are accepted at most Walt Disney World Table-Service restaurants, Signature restaurants, Character Dining Locations, and are required for Dinner Shows. An accepted major credit card guarantee is required for reservations at certain locations. Reservations must be cancelled at least 48 hours before the scheduled seating or a cancellation charge may be incurred (charge varies by location).

* Children ages 3-9 are limited to the Children's Menu (if one is available).

Gratuities are not included.
