So I found out today that my SIL had to cancel their trip, they weren't sure about my BIL's father and had to make a decision before their 45 day mark. He's the one who recently passed away and had the wake that was so crowded, hopefully they will be able to rebook at another time.

We had Southwestern Chicken Packets again for dinner. They are very tasty. So easy to make. I can't remember if I shared the recipe so thought I would share it now.

4 boneless skinless chicken breast halves (4 oz. each)
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup salsa
2 cups fresh or frozen corn, thawed
1 can (15 oz) black beans, rinsed and drained
3/4 cup shredded Mexican cheese blend
1/4 cup sour cream

Place each chicken breast half on a greased double thickness of heavy-duty foil (about 18 in. square). Sprinkle with salt and pepper. Top with salsa, corn, beans, and cheese. Fold th foil around mixture and seal tightly.

Place on a baking sheet. Bake at 425 degrees for 25-30 minutes or until chicken juices run clear. OPen foil carefully to allow steam to escape. Serve with sour cream.


Chuck and I put these on fajita tortillas. Each packet fills two tortillas. We also use Schwann's Oven-Roasted Chicken Bites (frozen) in place of the chicken breasts and cook for 40 minutes instead.

Really easy but tasty.

I made pork ribs in the crockpot. They came out delicious & tender. I made some homemade coleslaw & collard greens to go with that & Dana was a happy man.

We took the kids to the pool today to cool off & then came home to watch the world cup (well the boys watched).

Ditto on both counts! The baby is here already and the other will be a littlr later. I'm only hoping she isn't too crazy. Turned two on Thursday and has spemt the last two and a half weeks alone with grandma and grandpa. Is it too much to hope that the extent of her mom's "totally spoiled" comment is the whole new wardrobe and toys they bought her?

So my day turned out pretty well. The older one didn't end up getting here until 11 and then went down for a nap right as the baby left. Plus, she did really well today. Maybe just enough developing in the last few weeks while she as gone to be better behaved (KNOCK ON WOOD!). Tomorrow I've just got one and we're headed to park day. Seems like it might just be a pretty quiet week.
