Here's the recipes:

Bruschetta (which I found out just means toast w/ a topping)

this also makes a ton so I am going to 1/2 it


1 package cherry or grape tomatoes
1 package of basil
2 garlic cloves minced
Olive oil
salt
pepper

Parmesan Cheese

quarter tomatoes
chop basil into small (i.e. tiny) pieces
mix tomatoes, garlic, basil into a medium sized bowl
Pour a good amount of olive oil (he did about 1/2 cup) over mixture and stir
salt & pepper to taste
toast bread
put topping on toast and add small amount of shredded parm. cheese on top.
 
Sauce

2 (14.5 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
4 tablespoons of parsley
basil
1 garlic clove minced
1 tsp dried oregano
1 tsp salt
1/4 tsp ground black pepper
6 tablespoons olive oil
1/3 cup finely diced onion
1 c red wine (he recommended a cianti(sp?))

dice & mix basil, garlic. Add in all ingredients but the the last three. Stir thoroughly

in a large skillet over medium heat, saute the onion in olive oil for 2 minutes.

Add the tomato mix and red wine

bring to a quick boil

simmer for 30 minutes, stirring occasionally.
 
Meatballs

2 lbs ground beef
2 cloves minced garlic
2 eggs
1 c grated romano cheese
1 1/2 tbsp chopped Italian flat leaf parsley
2 c stale Italian bread crumbled (or that lovely already crumbled bread crumbs in a can)
about 1 and 1/2 c LUKEWARM water

put ground beef , garlic, eggs, cheese, parsley and salt & pepper. Mix

add bread crumbs and water 1/2 cup at a time......the mixture should be very moist but still hold it's shape when forming meatballs.

shape into meatballs

Heat olive oil in a large skillet (about 1/2 cup...enough to cover the bottom of the skillet) . Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from heat and drain on paper towel.

Place cooked meatballs into marinara sauce and cook for 15 more minutes. (if you want).

It was an absolutely gorgeous day here in Virginia. When I picked Kristin up from work she could tell I was very stressed out over my computer so suggested we make an afternoon of it. Here is what we did!

This is a small winery in our area that has some decent wines as well as an area out in the vineyard where you can take a bottle and some cheese and crackers. We sat out there for almost 2 hours!

We had a good time as well. There was lots of yummy food, music, traditional artisans, a viking boat replica and supplies, knights and other weapons displays, clan displays and lots of people in tartans and kilts. We had a bowl of yummy scones, strawberries and cream. Terra also got some medival shortbread. It made for a nice day and, wonder of wonders, Phil went with us too!

Now I've got to go get some ice cream to go with our apple crisp while Mom gets ready to start dinner. Catch you all a little later.

I bought some apples to make more apple crisp too. We made some last week-end and it was so good. My crazy eldest daughter doesn't like pies especially apples. She doesn't want any apple crisp for herself.
 
I just finished making more Corn Shrimp Chowder since we finished most of it last week-end or sent it to our mom's. I didn't have any left for my freezer.

We also made manicotti and stuffed shells - same stuffing different shells. I made a double batch of that so we could have some tonight, have some for us to freeze and also give some to our mom's.

The Dr's office just called & everything is ok :cool1: He has a cyst on both Kidneys & they are nothing to worry about. He may have to go in for another urine test, but he is in the clear! Boy is that a weight off our shoulders.

Thank you all for the good thoughts & prayers. I knew deep in my heart that all would be ok, but you just never know.

I am so happy :yay::yay::yay:

ETA: He is being referred to see a urologist just to be sure all is well with the other issues.

Sure! Here you go!

Corn Shrimp Chowder
2 T butter
1 med. onion, chopped
1 rib celery, diced
1 carrot, diced
2 cans (7 oz) tiny shrimp
2 c diced potato
1 bag frozen corn
1 t salt
1 t sugar
1/4 t pepper
3 T corn starch
4 c half and half

Saute carrot, celery & onion in butter until tender. Drain & reserve juice from shrimp. Stir in potatoes, corn, juice from shrimp, salt, sugar & pepper. Bring to simmer over medium heat. Mix corn starch & 1/2 c half & half until smooth. Stir into corn-shrimp mixture; add remaining half & half. Stirring constantly, bring to boil for 1 minute. Add shrimp. Stir occassionally, cook until heated. Makes 8 servings.

Cheese Broccoli Soup
4 T butter
1-1/2 c chopped broccoli
1-1/2 c chopped celery
1-1/2 c chopped carrots
1 small onion, diced
1/4 # canadian ham, diced
1/4 c water
1/3 c flour
4 c milk
1/3-1/2 # velveeta cheese
1 can cheddar cheese soup
1/8 t garlic powder
1 T parsley flakes
1/2 t salt
1/2 t pepper

Combine butter, veggies, ham & water. Cook on medium heat for 15 minutes. Stir in flour. Slowly add milk. Boil to thicken. Lower heat, add cheeses and seasonings. Do not boil again, just heat through. Use a very heavy pan to keep from scorching the milk. Can be doubled and frozen.

If freeze in individual services, reheat 4 minutes in microwave, stir & heat 1-2 more minutes.

Italian Sausage Soup w/ Tortellini
1 # italian sausage
1 c chopped onions
2 garlic cloves, sliced
5 c beef broth
2 c (or 4 medium) peeled tomatoes
1 c thinly sliced carrots
1/2 t basil leaves
1/2 t oregano leaves
8 oz tomato sauce
1-1/2 c sliced zucchini
3 T chopped parsley
1 med. green pepper
Grated parmesan cheese
Meat or cheese tortellini

Remove casing from sausage. In 5 qt. dutch oven, brown sausage. Remove & drain, reserving 1 T drippings in dutch oven. Saute onions & garlic in droppings until onions are tender. Add beef broth, tomatoes, carrots, basil, oregano, tomato sauce & sausage. Bring to boil Reduce heat, simmer uncovered 30 minutes. Skim fat from soup. Stir in zucchini, parsley & green pepper. Simmer covered an additional 35-40 minutes.

Add cooked tortellini & sprinkle with parmesan cheese when served. Don't freeze with tortellini.
 
Today was the first firefighter funeral that I went to. I was not sure what to expect, but it was a surreal experience. There was a 2 hour long mass in which the firefighters (including my dad) walked in together and sat together. It was absolutely heartbreaking when they closed the casket- Manny had 5 children. The FF’s brother in law did the eulogy and a firefighter did another speech. The bagpipes were played and the firefighter’s prayer was read, which was very hard for me to hear and I do not think there was a dry eye in the house. After the firefighters left the church, we followed them out. They put the casket on the back of a firetruck and had his helmet carried out. Hundreds and hundreds of fire fighters from other districts lined the streets and saluted the truck as it went by. The families of firefighters and firefighters were on buses that they chartered for today. As we followed the truck, there were firetrucks behind us as far as the eye could see. Someone later told me the procession was at least 2 miles long.They even had the ladders of two trucks up, creating an arch for the procession to go through. What amazed me was the support from the residents of the town. So many came out of their homes and businesses and just stood, some with their hands on their hearts, some crying, as we drove by. One man even ran out of his house, lowered his flag, and went back in. As we passed firehouses, the members were outside, standing at attention and saluting. Very touching. At the cemetery, the FFs were lined up at attention while bagpipes played amazing grace and taps—again ,not a dry eye was seen. It was so hard looking around and seeing “my firefighters” fighting back the tears..i just wanted to run up and hug them all, especially my dad.
When that was done,I could finally see my dad and just hug him---This entire situation has made me appreciate him even more and it was really hard for me that he had to work and couldn’t be with us for the viewing/funeral.
We had the luncheon at a firehouse and just sat with firefighters all day..after wards, we went out for a bit with some of the guys. I think it was like therapy for me to be with them. After I got home, I couldn’t stop crying…But its over and I appreciate your thoughts through all of this.
