So what do they do with the ships when they cancel a cruise? Do they keep them at Port Canaveral or do they sail them up the coast?

Probably depends on the storm track. Still too soon to say.

If the port is in the path, they'll have to take them back out to sea. The last thing you want in high wind is a giant cruise ship tied to the dock.
