does it make sense to book what is essentially a placeholder day one (platinum) vs onboard (2 weeks from now).

Yes. That way you will pay whatever is less.

Book on opening day. Reshop the cruise onboard. If a particular cruise is popular, the prices can increase dramatically and quickly, making the OBB reduction a moot point.

If the price hasn't risen enough to negate the OBB discount, you can cancel the opening day booking and rebook onboard.
